Tomorrow is the day. We gave you no warning. We know you have been waiting. 6 long months. But they’re back! Your favorite lamb sausages are coming to Westport Farmer’s Market tomorrow so come say hi and come stock up. They sell out quicker every year. Because they are THAT good. 😃 And now our sausages are Regenified Certified (which means the USDA-approved certification of regenerative farming!).

Thank you Lauren Minard Rohwer for these magnificent Red Devon heifers and steer to start our herd. Why add cows to our farm? We are adding them to our toolbox for continuing to revitalize the soils on our farm, for natural parasite management in our sheep flock and for producing nutrient/dense, regenerative beef starting late 2027. And why these Red Devons? They come from genetic lines that have been selected for thriving on 100% grass. We have put them on a 16 acre field abutting an orchard that isn’t quite right for sheep right now but unlike sheep, cows will also eat hay even when there are greener options. So we’re rolling out some round bales, letting them eat some, trample some, forage the green stuff and get it sheep-ready for the next time around this fall. Environmental stewardship, strategic grazing and providing our community with a source for nutrient dense, humanely-raised food is at the core of what we do.

You should plan to stop by our Lagrangeville farm stand on Sunday to pick up a chicken, or two! Their flavor is just unbeatable. Why? We raise chicken breeds that grow slower which means they have more time on pasture, enjoying all of the nutrients and insects found on our Certified Regenerative pastures. We will be in Westport on Thursday this week with the key ingredient to making this life-changing shredded pork-grilled cheese sandwich. It’s so simple to make and when you cook the pork hock you will have several meals ready to go at a moment’s notice! While Penny is interning at the National Stud ram sale with Willoughby Online Sales and Frank and Jackson are holding down the fort back at the farm, I took the opportunity while in Sedalia here to visit a maintained prairie. For me, Farmer Whitney, these beautiful ecosystems are the intersection of my passion for horticulture and the foundation of so much theory of regenerative farming and ruminant management. In the space of about an hour I tagged 48 different plant species, 7 different species of birds, bees and butterflies let alone how many different grasses. These prairies are protected lands and are maintained through occasional controlled burns. Seeing how plants populate and repopulate a prairie educates and informs how we not only add forage plants to our fields on the farm but maybe more importantly continues to teach us how to ‘see’ our pastures back home.
