In 2021 Hudon co-founded Domaine de Montaillant with his associate Jérôme Loubert in the lesser-known IGP Côtes de la Charité appellation, nestled on the argilo-calcareous slopes of Chasnay. Spanning 6 hectares (3 of Chardonnay and 3 of Pinot Noir), the estate was certified organic in 2024. Hudon follows biodynamic principles, treating vines with herbal teas, vinifying in sync with the lunar calendar, and crafting wines that range from fresh primeurs to more age-worthy expressions, all while emphasizing the unique expression of his parcels. Hudon remains an advocate for sustainable, low-intervention winemaking, blending his sommelier precision with a winemaker’s intuition. His bottles, like the lively Groseille red, have positioned him as a rising legend in the Loire, celebrated for their purity, energy, and storytelling of overlooked terroirs.

His estate, based in ,produces about 120,000 bottles annually, focusing on single-vineyard wines that express Etna’s unique volcanic terroir. Cornelissen’s philosophy is rooted in minimal intervention, aiming to capture the essence of Etna’s landscape—often described as “liquid rock.” He farms organically, avoiding chemical treatments and even limiting biodynamic preparations, preferring to follow nature’s rhythms through careful observation. His vineyards, situated between 650 and 980 meters in altitude, feature indigenous grape varieties like Nerello Mascalese, Nerello Cappuccio, Carricante, and lesser-known grapes such as Minnella Bianca, Minnella Nera, and Grecanico. He avoids monoculture by interplanting vines with fruit trees and wheat, and his meticulous vineyard work includes late harvests (mid-October to mid-November) to ensure optimal grape maturity, with yields kept deliberately low. In the cellar, Cornelissen’s approach is equally non-interventionist. He uses no commercial yeasts, additives, or oak, and has shifted from amphora to inert, lined fiberglass vessels for aging to preserve the wine’s purity. Yannick Meckert is a rising natural winemaker based in Alsace, France, with a Burgundian mother and Alsatian father. After studying viticulture and oenology in Beaune and Montpellier, he rejected conventional methods used at his family’s estate and trained globally with mentors like Philippe Pacalet, Patrick Meyer, and Terada Honke in Japan.
Since 2020, he has farmed 3.5 hectares, cultivating varieties like Pinot Noir, Riesling, and Gewürztraminer on clay, limestone, schist, and volcanic soils. His approach emphasizes biodynamic principles, total grass cover, and minimal intervention, using no fertilizers, sulfur, or additives. Inspired by Jules Chauvet, Yannick employs whole-bunch maceration and extended aging, producing vibrant, expressive wines like “Baisers Retrouvés” and “Spicy,” celebrated for their depth and energy.
