Pili Nut

THE PILI

The pili nut is one of the most popular products of the Bicol Region, including the province of Sorsogon. The nut is delicious whether roasted plain, salted, or candied. It is also becoming a favorite ingredient for baking, in place of walnuts or almonds. The pili fruit from which the nut is taken is less popular among non-Bicolanos. But for locals, it is a reminder of home. The fruit, which is black when ripe for eating, is soaked in hot water until soft. The thin, black skin is then peeled off to reveal and pinkish flesh, which may be eaten plain, dipped in fish sauce, or coated with sugar. The flesh gives way to a slippery, hard shell. This is dried and cracked to harvest the precious pili nut. Thank you to Alma Gamil for sharing this photo with us!
