Easy-to-make, tasty kabobs without having to deal with skewers.

This Moroccan Kefta Kabob recipe brings together juicy ground beef, fresh herbs and warm ras el hanout seasoning into an easy grilled dinner outside the normal dinner rotation.

INGREDIENTS

For the kefta:
• 1 lb. ground beef
• 1 small yellow onion, grated
• 2 cloves garlic, minced
• 1 bunch fresh parsley, chopped
• 1 bunch fresh cilantro, chopped
• 2 Tbsp. ras el hanout (we love the blend from )
• 1 tsp. salt
• ½ tsp. black pepper

For the garlic-yogurt dip:
• 1 cup plain Greek yogurt
• 2 cloves garlic, minced
• Juice of 1 lemon
• 1 Tbsp. olive oil
• Salt and black pepper, to taste

DIRECTIONS

1️⃣ Add the beef, onion, garlic, parsley, cilantro, ras el hanout, salt and pepper to a large bowl. Mix by hand until evenly combined and slightly tacky.
2️⃣ Cover and refrigerate for 30 minutes. Meanwhile, prepare the grill for direct cooking and preheat it to 400°F.
3️⃣ Divide the mixture into 6 equal portions and shape each one into a sausage-like log. Thread them onto skewers or grill them without skewers. Be sure to soak wooden skewers before using them.
4️⃣ Grill over medium-high heat for approximately 10 minutes, turning every few minutes so the kefta browns evenly on every side. Cook until the internal temperature reaches 160°F.
5️⃣ Remove the kefta from the grill and let it rest briefly before serving.
6️⃣ To make the dip, whisk together the Greek yogurt, garlic, lemon juice and olive oil. Season with salt and pepper to taste.

Serve the kebabs with the garlic-yogurt dip, pita bread, carrots and cucumbers. Save this recipe for your next grilling night!
