Healthy cake with no refined flour, no eggs, no dairy


The cake turns out denser than a cake made with wheat flour.

Ingredients

Cake Layers
400 g rolled oats
200–220 ml plant-based milk
3 tbsp coconut oil or ghee
2 tbsp psyllium
3–4 tbsp sweetener

Cream
600 ml plant-based milk (I use coconut milk)
4 tbsp cornstarch
1 tbsp Vanilla extract
Sweetener to taste (if using sugar - about 100 g; if using syrup - about 5–6 tbsp)
2 tbsp coconut oil
Instructions

1. Mix all the ingredients together. Stir with a spoon first, then knead with your hands. You should get a firm dough that doesn’t stick to your hands.

2. Divide the dough into 6–8 parts (depending on the diameter you want for your cake layers). Roll each piece out very thin.

I roll the dough directly on baking paper - this way it doesn’t stick.

Trim the dough into your desired shape. Leave the scraps next to the layers for baking.
Alternatively, you can bake the dough first and trim it after baking.

3. Preheat the oven and bake at 180°C for about 20 minutes, until a golden crust forms.
Let the layers cool completely.

4. Grind the baked scraps into fine crumbs - they will be used to decorate the cake.
If you have too many scraps, you can simply eat some as cookies.

Cream
1. Mix a small amount of milk with the cornstarch and stir well until smooth.
2. Bring the remaining milk to a boil with vanilla extract and sweetener. Slowly pour in the starch mixture in a thin stream, whisking constantly to prevent lumps.
I recommend whisking continuously. Cook for about 5 minutes until thickened.
The cream will thicken even more as it cools.

6. Spread the cream generously over each layer. Sprinkle the top with crumbs.

To coat the sides, place crumbs on a plate and use a flat serving knife to lift the crumbs upward — they will stick to the cream and evenly cover the sides.

Refrigerate the cake for 8–12 hours to allow it to soak.

Why Buy Sweets when you can make a dairy-free chocolate-coated bar at home?


Dairy-Free Chocolate-Coated Bars

Delicious, light, filling, and rich in vitamins and nutrients.

Ingredients (for 4 large bars):
100 g dry cashews
100 g dry green buckwheat
1 tablespoon coconut oil (can be replaced with another neutral, non-aromatic oil)
A pinch of salt
1 tbsp vanilla
Honey to taste
50–70 ml water
Fruits or berries (optional)

Chocolate coating:
100 g cocoa butter
85 g cocoa powder
Honey to taste

Instructions:
1. Rinse the cashews and green buckwheat and soak them in water for 3–4 hours. Then rinse again.
Note: green buckwheat becomes slippery, so it should be rinsed several times.
2. Blend all ingredients in a blender. If the blender does not make the mixture creamy, add a little more water.
3. Transfer the mixture into a mold. Optionally add berries and/or fruits. Freeze until solid.
4. Once the mixture is fully frozen, melt a chocolate bar and coat the bars with chocolate. Store in the freezer.

Or make your own chocolate:

Melt the cocoa butter using a water bath. I usually bring water to a boil in a pan and then turn off the heat. I finely chop the cocoa butter with a knife, place it in a bowl, and set the bowl into the hot water. The cocoa butter melts slowly. It’s important that no water gets into the cocoa butter - otherwise, the chocolate will become grainy. I do not boil the cocoa butter and let it melt gently.

Then add the cocoa powder in small portions, mixing well. Finally, add honey to taste.

This chocolate melts when it comes into contact with warm hands, so I usually store the finished bars in the refrigerator.

Why Drink Tea When You Can Make a Non-alcoholic Mulled Wine?


Nourishing, vitamin-rich, warming drink

Ingredients:
1 apple
2 oranges
a small piece of ginger (to taste — the more ginger you add, the richer, warmer, and spicier the flavor will be)
2 star anise
5 cloves
1 cinnamon stick
4–5 cardamom pods
1 liter of water
honey, to taste

Instructions:
Cut the apple into small pieces.
Grate the ginger.
Squeeze the juice from the oranges.
Combine all the ingredients except the honey and orange juice.
Simmer for 20 minutes.
Strain the liquid and let it cool slightly.
Add the honey and orange juice, then stir well.

Whole Grain Yeast-Free Bread -free

Ingredients for bread without yeast, eggs, or sourdough. Very tasty with a wonderful texture
400 g whole-grain wheat flour
4 tbsp psyllium
almost 1 tsp baking soda (not heaped)
1 tsp salt
2 tbsp olive oil
400 ml warm water (warm, not cold)
2 tbsp lemon juice or 1 tbsp vinegar

Preparation:
1. Mix the dry ingredients: flour, psyllium, baking soda, and salt.
2. Add the water, lemon juice, and oil. Knead the dough. It will be sticky. Let it rest for 10 minutes so the psyllium can dissolve - the dough will become more elastic.
3. Wet your hands and shape a loaf. Sprinkle with seeds (sesame, pumpkin seeds, and sunflower seeds).
4. Bake at 180 °C for about 40 minutes. The baking time may vary depending on your oven. Bake until the bread is nicely browned.
Let it cool before eating.

4-ingredient Protein Cookies


Ingredients for soft protein cookies:
200 g cooked or canned chickpeas
140 g almond flour
1 tbsp coconut oil
2 bananas
Vanilla (optional)
A little water (~50–70 ml), if the blender doesn’t blend the dry ingredients well

Instructions:
1. Blend all the ingredients except the almond flour in a blender. Then add the almond flour and mix well.
2. Shape the dough into cookies.
3. Bake for 20 minutes at 180°C (356°F). Baking time depends on the oven. I turn the oven off when the cookies are lightly golden on the top and bottom.

Why Do People Roast Grapes?


Ingredients for delicious churchkhela:
1 liter of grape juice (you can use ready-made juice or squeeze it from about 2 kg of grapes)
150 g flour
Walnuts (~300-350 g)

Cooking process:
1. I use freshly squeezed grape juice, but you can also use ready-made juice, even packaged juice.

To extract the juice, I add just a little water to a pan, put the grapes in, and simmer them covered until the grape skins burst. Cook for about 15–20 minutes.
Let the grapes cool, then use a nut bag to squeeze out the juice. Add the grapes in small portions. The remaining pulp can be eaten - it’s tasty.
2. Pour 0.5 liters of the juice into a pot or pan and put it on the heat. Bring to a boil and simmer the juice for about 30 minutes.
3. Add flour to the second part of the grape juice, adding it little by little and whisking each time. You should get a liquid similar to pancake batter.
4. While the juice is reducing, thread the walnuts onto a fishing line or thick thread using a needle. First, make a knot at one end of the thread so the nuts don’t fall off. Make a loop at the other end so it’s easy to hang them for drying (for example, on hooks), or leave extra thread to tie them to a clothesline.
5. Pour the juice mixed with flour into the boiling grape juice, constantly stirring with a whisk.
Cook for about 5 minutes over medium heat. You should get a fairly thick jelly. Be careful not to overcook it, otherwise it will become too thick and won’t soak into the nuts.
6. Dip the string with the nuts into the hot juice, using a spoon to coat it on all sides. Take the string out and hang it over a plate to dry for 15–20 minutes.
7. Then dip the string with the nuts into the pot again so the layer of juice becomes thicker. Dry in the shade for 5–7 days. If you dry it in the sun, the churchkhela will become hard and rubbery, and the nuts won’t have time to absorb the juice.

Why buy sauce if you can make it from avocado?


A very tasty and healthy sauce. It’s perfect for salads, sandwiches, pasta, and boiled vegetables.

Ingredients:
1 ripe avocado (if it’s unripe, the sauce will be bitter and not tasty)
2 cloves of garlic
A handful of roasted sunflower seeds
Salt to taste
A bunch of fresh herbs (spinach / cilantro / parsley work well)
Juice of 1/2 lemon or 1 small lime

Instructions:

Blend all the ingredients in a blender until smooth and creamy.

These 2-ingredient cookies are rich in calcium, protein, potassium, antioxidants, fiber, and plant-based protein.

Ingredients:
200 g sesame seeds
2 ripe bananas

Instructions:

Mash the bananas with a fork until smooth and mix with the sesame seeds. Shape the mixture into cookies and place them on a baking tray. I recommend spreading them in a thin layer so they bake faster. I usually bake them for 15 minutes at 180°C (356°F), watching until the cookies start to turn lightly brown. Let the cookies cool completely, then remove them from the baking tray.

Why Buy Yeast Bread When You Can Bake Healthy Sweet Potato Bread?

Ingredients for healthy bread (small batch):
1 sweet potato (200–250 g)
150 g oats
1 tbsp flax seeds
salt
A handful each of sunflower seeds, sesame seeds, and pumpkin seeds

Instructions:
1. Boil the sweet potato, peel it, and mash it with a fork until smooth.
2. Grind the oats and flax seeds into flour. Add all the ingredients and knead the dough.
3. Shape the dough into a loaf or bread shape.
4. Bake in the oven at 180°C (356°F) for 35–40 minutes. Baking time depends on your oven. Look for a light golden-brown crust.
