Does anyone else love watching the dough come together in the mixer? 😂

I don’t know why, but I find it so satisfying watching the dough change right in front of me - from all messy and separate to smooth, strong, and elastic. And while I’m watching, I’m already imagining the bread it’s going to make tomorrow. 🍞

And yes - this is the real soundtrack of my baking Thursdays. No music here😃😜

I wish I could call it my slow baking morning, but that wouldn't exactly be true. Some (or maybe most) of my bake days are busy, loud, chaotic, multitasking, and I could probably come up with ten more synonyms!😂
Especially today, when the kids started school and my morning suddenly became a little extra... everything at once.😅
But honestly, I Love it. It's not always slow or peaceful, but it's real - and I wouldn't have it any other way.💛

Every loaf is made with organic flour, filtered water, and sea salt - just three simple ingredients. I make everything in small batches, with lots of care, so you can enjoy a fresh, naturally fermented sourdough loaf straight from my porch on Thursday💛

Summer sounds crisp, bread… and cicadas in the background. ☀️🥖

It’s hard to believe it’s already August. Here in Illinois, this time of year always brings a tiny bit of sadness—because it means summer is quietly slipping away.

For now, I’m soaking it all in: dinners on the porch, evening walks, golden sunsets, kids staying outside until the streetlights come on, and fresh sourdough cooling on the counter💛

A little peek into last week’s bake day🤗
This time I lowered the dough hydration just a little, and I honestly loved how it turned out. The dough was so much easier to shape, and the crumb came out better too. Looks like this is the one I'm sticking with. This small change makes such a big difference.
