Pasta e fagioli! A classic comfort dish. Hearty, delicious and perfect after a day of battling the cold and snow. Started the morning by soaking the beans. If you want less cook time then I would suggest soaking over night. I had plenary of time to let it cook for 3-4 hours. Medium pot, started with a little evoo on medium, once it was hot I added guanciali and let it get a light brown. Add 2 cloves of garlic and once it started to permeate, I added some tomatoes, deseeded. I let the tomatoes cook down, added some parsley. Drained my beans and added them to the pot. I lightly cooked the beans with the tomatoes garlic mixture and then added water. no judgement, you can use chicken broth if you’d like. I added a cup of chicken broth and two cups of water. Bring it to simmer and cook, stirring frequently as to not let the beans stick to the bottoms of the pot for a couple of hours till the beans have cooked and it looks creamy. I add salt and pepper to taste at the end. Dish it up and enjoy.
