The dogs of Monte Christo…
Dogs always have a place on a ranch. They chase of coyotes, let you know when someone is coming down the drive, and even help to bring in cows or sheep! Soror is a border collie - her name means Sister in Latin because her black and white coat reminds us of a nun’s habit. Chime is the biggest dog on the place; his job is to keep the sheep safe. Bear is a big fluffy dog who diligently guards the front porch. Everyone has a job out here!

When you work the land, you share the cycles of nature. Fall is here. Everything is suddenly gilded with gold and bronze. The air is crisp, and fruit is heavy on shrubs and trees. The fever of summer’s busy work has cooled. It is time to prepare for a long winter’s rest.

Who says ground beef is boring? Try making our meatball stroganoff with homemade egg noodles. For the meatballs: Mix one Monte Christo Family Pack of ground beef with one egg and a half cup of milk. Mix in with two tablespoons of flour, a dash of nutmeg, salt, and a diced onion. Form into balls and brown in cast iron skillet. For the sauce: sauté 2 cloves of garlic with 1/2 diced red bell pepper and 1package of diced fresh oyster mushrooms from in a saucepan. Add 1 pint heavy cream. Slowly stir in eight ounces of cream cheese. Allow to simmer while stirring. Add fresh parsley, salt, and pepper to taste. For the noodles: Mix one cup of flour with two eggs. Knead well. Let chill in refrigerator 30 min. Roll into a thin sheet on a floured surface. Cut into thin strips, and boil until tender. Serve meatballs on a bed of noodles, and smother with the cream cheese sauce. Enjoy!
