Asparagus is easy to make in an air fryer. Just rinse, trim the woody ends, place in the basket, toss with a bit of olive oil, salt and pepper, and cook for 5-8 minutes, tossing halfway. Serve hot, or refrigerate and serve cold.

Spring and summer root veggies like beets, parsnips, radishes, and turnips taste great when roasted. Roasting garlic and lemons caramelizes them and increases their flavor too.

Here's how to do it:

~Preheat oven to 400 F
~Remove greens and trim root veggies. Wash, peel and cut in halves or quarters.
~Place everything on a sheet pan lined with parchment paper or in a casserole dish.
~Drizzle with oil, sprinkle with salt and pepper and mix to coat.
~Take a head of garlic, break off and peel the cloves, cut lemons in half and remove seeds, add to veggie mix.
~Roast in oven for 25-35 minutes. Veggies are done when pierced easily with a fork.
~Remove from oven and let cool slightly.
~Squeeze lemons over veggies.
~Serve immediately or refrigerate for a couple hours to use cold in salads, sandwiches, or wraps.
