🏔️ Making City of Laredo proud from Aspen, Colorado.

This week at the Aspen Ideas Festival, Laredo is represented by two leaders committed to strengthening our community.

Marcella Juarez is helping build a healthier local food system through sustainable agriculture, land stewardship, and Palo Blanco Farm and Ranch.

Ray Sanchez is working to improve access to care and support for children affected by pediatric cancer and blood disorders through Smiles From Heaven.

Together, they are joining leaders from across the country to exchange ideas, build relationships, and bring new solutions back to South Texas.

From food security to pediatric healthcare, Laredo has a voice at the table.

We had a full-circle moment this week at our alma mater, Laredo College.

We were honored to speak with culinary arts students about the importance of sourcing fresh, local ingredients and how supporting local farms helps strengthen our community and food system.

Even more special? Seeing our microgreens featured in their beautiful Valentine’s luncheon. The creativity, talent, and passion these students bring to the kitchen is inspiring, and it gives us so much hope for the future of food in South Texas.

Thank you to Laredo College and the Culinary Arts Program for the invitation and for supporting local agriculture. Opportunities like this remind us why we do what we do.

The future of food is local — and it’s in great hands. 🌱

Tiny greens. Big impact. From Palo Blanco Farm & Ranch to the plates at Noble, these microgreens bring brightness, texture, and fresh intention to every dish they touch.

Behind every fresh plate at Noble is a story that starts long before it hits the kitchen. 🌱
At Palo Blanco Farm & Ranch, Chef Nelson met with Marcella Juárez to see where our microgreens are grown, why local sourcing matters, and how community-driven farming brings flavor and purpose to every dish.
