Brisket from our latest Wagyu steer, harvested at 38 months. Grass fed and finished on pasture. We will be harvesting 2 additional steers late this fall/winter, one Red Angus and one Wagyu.

Wagyu fat melts at a lower temperature compared to normal beef. The collagen to gelatin conversion progresses quickly during the smoke. On to the pit!
