Breakfast. Local small farm fresh egg scrambled with local farmed potato, fresh picked home grown collards chard, basil, sweet potato greens, purslane, tree spinach. A slice of fresh baked sourdough bread, toasted (Strawberry Fields Sourdough) No butter, just olive oil, salt, freshly made salsa (farmers market ingredients)and homemade lavender jelly. You could call it a health kick. ❤️🙏

For those of you who are about to employ desperate measures in order to deal with being overrun with zucchini (or yellow summer squash), here is a way to preserve it and make use of it.

Dehydrate until absolutely dead dry, pulverize and make zucchini/Amish flour from it. It can be used as a partial replacement for regular flour in baked goods (brownies and cakes especially), as a thickener for sauces and gravies.

This 24 fl oz jar contains the flour from roughly 30 lbs of zucchini.
