Organic Millet flour sourdough bread.⠀

Ingredients:⠀
4 oz organic millet starter ($0,35/ounce)⠀
9 oz water⠀
0,8 oz salt⠀
13,5 oz organic millet flour ($0,35/ounce)⠀
6,5 oz Bob's Red Mill Paleo Baking flour (Almond, Arrowroot, Coconut and Tapioca flour) ($0,90/ounce)⠀
1 oz flax seed flour + 3 oz water (replaces 2 eggs) ($0,31/ounce)⠀
0,5 oz oil ($0,22/ounce)⠀

Total Cost $12,40 for the 24oz loaf of bread. More expensive than wheat bread.⠀

Steps:⠀
I took my millet flour starter straight from the refrigerator and mixed with water, salt, organic millet flour, the Paleo Baking flour, and oil.⠀
I mixed the flaxseed flour and water separately and left sit for 5 min.⠀
Then I mixed everything together and formed the loaf (no kneading nothing like that) and let it sit for 24 hr, then place in preheated oven (425F) for 35-40 min.⠀

After trying this recipe the result is not as a wheat bread. It is very dense because the natural starter is not as strong as commercial yeast. It is a little like a cake/biscuit in texture. But it tastes really good.⠀

This is not the final recipe but a nice experiment. The final recipe will aim to make it more like a wheat bread in texture. ⠀

A few weeks before I just did my every-6-months 5-day fasting. The pic is breakfast on Day one.

More precisely I did the Fasting Mimicking Diet as created by Dr Valter Longo

There are different types of fasting, timing and duration. They are all used to activate certain mechanisms that benefit the health.

Basically, Fasting Mimicking Diet is not exactly a 5 day real fasting (as in eating nothing) but you reduce calories to a point when the body starts activating those mechanisms you are looking for. In other words, you don't need to go to zero calories per day to activate those mechanisms. And prolonged fasting (-mimicking) activates mechanisms that the body will only activate after 3 or 4 days of fasting. Definitely read Dr Valter Longo's work for the whole story and explanation. His Fasting Mimicking Diet is also suggested by Plant Paradox author.

Soon, I will be posting how I reduce my calories, every meal for each of the five days, with plant paradox compliant food...

DIY starter for sourdough bread⠀
You need water and flour.⠀
After you get your starter right, it will last you a lifetime.⠀

Ingredients:⠀
Distilled Water (no chlorine)⠀
Flour (organic sorghum, millet or wheat)⠀
Organic Pineapple Fruit Juice (optional)⠀
Use clean utensils⠀

Day 1-2⠀
in a big bowl place 4oz water and 2oz flour and cover (not air tight)⠀
optional: substitute 2oz of water with fruit juice (i.e. pineapple)⠀
open and stir every 2-3 hours to get oxygen in the mixture⠀
store at 72°F-78°F (22°C-25°C) temperature⠀
you will not notice much going on⠀

Day 3⠀
add 1oz of flour, keep stirring every 2-3 hr⠀
you should see some activity⠀

Day 4⠀
add 1oz of flour, keep stirring every 2-3 hr⠀

Day 5⠀
add 4oz water and 4oz flour⠀
no need to stir every 2-3 hr anymore⠀
check how long it takes to double in volume (it takes days)⠀
you will notice activity and rising and then activity ends⠀

Repeat⠀
when activity ends, add 4oz water and 4oz flour⠀
check how long it takes to double in volume (when it doubles in 24hr then it is READY for bread making)⠀

store in refrigerator :) (no need to feed for 1-1,5 months)⠀

sorghum and millet are lectin free and gluten free⠀
wheat is not lectin/gluten free, fermenting is supposed to eliminate them but you are risking (a 24 hr fermenting might or might not eliminate all of them)⠀

Now you can do your own bread, you will not find bread made of just water and flour in any supermarket. Even if they claim to make real sourdough bread with just water and flour, how long are they fermenting it to kill lectins and gluten?⠀
So, just make your own starter and bread, super easy, I will post on how to make different breads, stay tuned.⠀

Good if found organic and possibly locally grown. No unripe harvesting and refrigerated transportation. To be eaten in moderation as if they were candies 🍬. They all signal the body to start storing the sugar as fat before the winter comes.

Cooked Millet with Coconut Milk Sauce and Avocado 👌.

This is gluten free and lectin free. Plant paradox compatible recipe.

For the sauce just add as much nutritional yeast as you want then add coconut milk as much as you prefer and stir. Try to make it a little thick as it goes better with the millet. Add pepper, olive oil and oregano.

Add sauce to millet and top with half avocado.
