Tonight we reverse seared some New York strips.

Threw these on the pit boss at 225 and brought them to an internal temp of 110. Let them rest for 5 - 10 minutes then threw them on the Blackstone to get that nice sear. Flip them every minute or so until internal was 135 and let rest another 5 minutes.

Got the pit boss fired up and we’re cooking this Tri-Tip, brisket style.

Used our Gunpowder blend on this today. I think this give us the perfect bark with that iconic Texas flavor we all love! See you guys in a few hours!
