Salmon season is here! and I got a couple of questions today on what kind of salmon we can have here in CA and what other types exist.
Back at home there were a bunch of red flesh fish that had different names: semga, keta, losos'..... here it "salmon" for everything.
So what do we have here from Pacific Ocean?
1. Chinook = King = Semga - the best and tastiest possible
2. Pink = Gorbusha
3. Coho - smaller and dryer than King
4. Chum = Keta
5. Sockeye - the most dry type
6. Steelhead = Pink Forel (trout) fatty and tender
There is also Atlantic salmon, which can be wild as well, but most commonly used in farming, so usually Atlantic associated with "farmed" fish.
And the last thing: fresh wild delicious and healthy Pacific King salmon can be bought directly from the fishermen boats in Half Moon Bay and Monterrey, for the third of the price of Whole Foods.
