We wanted to take a moment and thank Four Maples Place LLC and Chef Derek for putting on an amazing event. There was a lot of work behind the scenes and we are forever grateful of all the efforts.
If you attended the event, and that pasture raised chicken or pork spoke to you, I hope this will be a beginning of opting out of factory foods.
We heard multiple times during the event, "I had no idea this is what chicken was supposed to be." We are so used to meat, pumped out as quickly and cheaply as possible, with zero regard the health and happiness of the animals, the health and vitality of the land, and the richness of flavors and nutrients in the food. We just end up units on a shelf, rather than real food to nourish us.
One request we made to Chef Derek was, "Do not mask the flavors of our meats." It does not need it. It stands alone brilliantly. And Chef Derek delivered masterfully! Simple ingredients, REAL chicken and pork presented in a culinary mastery that really showcased the difference from grocery store meat vs one raised in alignment with nature's brilliance.
Those flavors were hints of how nutrient dense the meat is, and an imprint of how that animal lived. This is not to pat ourselves on the back, but to acknowledge how real food tastes and nourishes when we entangle with nature. We raise our animals in a way that honors their phenotypical distinctiveness and don't try to fit them to our mold. We adjust to theirs.
This is regeneratively raised, nature led, pasture powered, anti-factory chicken and pork!
This is food as nature intended.
