Vegan Carrot Cake

1 1/2 Cups all purpose Flour
1/2 Cup Whole Wheat Flour
3 tsp Baking Powder
1 tsp Salt
4 tbs Flax Seed (1 flax seed to 3 tbs water)
1 1/2 Cups Olive Oil
2 Cups Sugar/Agave
2 tsp Vanilla extract
3 tsp Mix Spice
3 Cups Grated or Shredded Carrots
1/2 Cup Chopped Pecans
1/2 Cup Chopped Walnuts
1/2 Cup Shredded Coconut

INSTRUCTIONS

Preheat oven to 350°F
In a large mixing bowl, beat together flax mix, oil, sugar, and vanilla. Add carrots, walnut, pecans and coconut. Mix in dry ingredients. Add 1 cup of hot water.
Grease pan and add batter.
Bake for 40 to 50 minutes or until cake tester is clean.
