First time growing eggplant. Don’t even have much experience eating eggplant. This is only one plant. I didn’t know how crazy prolific it is or how big the plant gets. This is only about a quarter of what I’ve already harvested. Need some recipes! Outside of eggplant parm, eggplant fries… etc…
