I wanted to share a quick update for our first week at Ashley B’s!

Our official opening week will begin Tuesday, June 23, pending final health department inspection approval.

We will be open Tuesday–Friday for opening week, with pre-order carryout only.

✨Tuesday

Lunch — Classic Club on Croissant — $15
A large buttery croissant layered with turkey, ham, bacon, lettuce, tomato, cheese, and mayo. Served with pasta salad and a pickle spear.

Dinner — Ritz Cracker Chicken Plate — $17
Tender chicken breast topped with a buttery Ritz cracker topping and baked until golden. Served with mashed potatoes, green beans, and butter muffins.

✨Wednesday

Lunch — Grilled Chicken Salad — $15
A fresh garden salad topped with grilled chicken breast, shredded cheese, boiled egg, bacon, tomatoes, cucumbers, red onion, and croutons. Served with a homemade yeast roll and your choice of homemade ranch or homemade vinaigrette.

Dinner — Pork Roast Plate — $18
Slow-cooked pork roast served with green beans, corn casserole, fried apples, and a homemade yeast roll.

Lunch — Hot Chicken Bacon Club Plate — $15
Shredded chicken breast mixed with mayo, Dijon, garlic, Swiss cheese, and bacon, baked inside flaky crescent dough and sliced into a generous portion. Served with green beans.

Dinner — Meatloaf Plate — $17
Homemade meatloaf served with mashed potatoes, green beans, and cornbread.

✨Friday

Lunch — Trio Salad Plate — $15
A scoop of homemade chicken salad, tuna salad, and pimento cheese served with pasta salad, crackers, and a pickle spear.

Dinner — Bourbon Glazed Chicken Thigh Plate — $18
Tender chicken thighs baked in a sweet and savory bourbon glaze. Served with a baked sweet potato with butter and a sugary cinnamon topping, broccoli casserole, and butter muffins.

Desserts Available All Week

Chessman Banana Pudding — $4
A rich, creamy banana pudding made with cream cheese, sweetened condensed milk, vanilla pudding, real whipped cream, bananas, and two layers of Chessman cookies.

White Chocolate Lasagna — $4
A cool, creamy layered dessert with a sweet crust, cream cheese layer, white chocolate pudding, and whipped topping.

Chess Bars — $3
A generous-sized homemade chess bar.

Ashley B’s Update

Hey everybody! I wanted to give a quick update on our carryout opening date.

I tried really hard to have everything ready to start carryout meals by June 1st, but it’s just not going to be possible to do it the right way by then. This has been a huge project — not only getting my kitchen ready, but also renovating a 5,200 square foot building — and that has been a monumental task all by itself.

I also already had plans to be out of the country on vacation from June 9th through June 16th, so honestly, it makes more sense to start fresh once I’m back instead of opening for a week, stopping, and then starting again.

With that being said, Ashley B’s carryout meals will officially begin Monday, June 22nd.

For everyone who has already placed orders for the first week of June, I sincerely apologize for the delay. The menu for the week of June 22nd will be the exact same menu I had posted for the first week of June, so those meals will still be offered — just a little later than planned.

I truly appreciate everyone’s patience, support, and excitement. I want to make sure everything is done correctly and not rushed. My plan is to offer carryout only for the rest of June and probably the first few weeks of July, and then hopefully open the sit-down portion of the restaurant around the middle of July.

Thank you all so much for supporting my small business and following along through this process. I’m so excited to finally get Ashley B’s up and going, and I can’t wait to start cooking for you all on June 22nd!

Oh my goodness… Ashley B’s has hit 2,000 followers! 🥹🤍

That may not seem like a big number to some people, but to me, it means so much.

Ashley B’s started with me cooking meals, posting menus, taking orders, and hoping people would give my food a try. Every order, every share, every comment, every recommendation, and every person who has supported this little dream has helped get it to this point.

Now here we are, getting ready to open at 198 East Court Street, and I am just so thankful.

Thank you for following along, ordering meals, telling your friends, cheering me on, and being patient with me as I grow. I truly could not do this without the support of this community.

Big news from Ashley B’s! 💛

Our goal is to begin our soft carryout launch on Monday, June 1st at our new location, 198 East Court.

For now, we will be offering pre-order carryout only for both lunch and dinner. Lunches will generally be a little lighter and easier — things like salads, sandwiches, lunch boxes, and lighter plate options — while dinners will be more of the homemade comfort food you all know and love from Ashley B’s.

Menus will be posted soon!

Because this is a brand-new kitchen, a brand-new building, and a brand-new process, we are going to ease into things slowly. To help minimize food waste and allow us to get into a good rhythm, all orders will still need to be placed in advance.

I will also be out of the country for one week in June, so we will do our first soft carryout week, take a short pause while I’m away, and then continue with pre-order carryout lunches and dinners once I return.

Dine-in soft openings will come later, most likely in July, once we are a little further along with renovations and ready to welcome people inside the way we want to. Our official grand opening will be no sooner than mid-July, and it may be closer to late July depending on how everything comes together.

This whole journey has been a huge undertaking, and I appreciate everyone’s patience, encouragement, and support more than you know. We are taking it one step at a time, and I cannot wait to start feeding you all from our new home downtown.

Ashley B’s is starting to look ahead toward our tentative restaurant opening in June, and I’m beginning the search for the right person to join me in the kitchen!

I am looking for a full-time Kitchen Assistant / Prep Cook.

The ideal person would have some kitchen or cooking experience, but I am also willing to train the right person if they are dependable, hard-working, fast-paced, and genuinely willing to learn.

This position will involve a lot of prep work, including cutting, slicing, portioning, organizing ingredients, helping with daily food prep, keeping the kitchen clean, and eventually learning how to help prepare Ashley B’s recipes the way I make them.

I need someone who:
• Is dependable and shows up when scheduled
• Can work at a steady, efficient pace
• Pays attention to detail
• Is clean and organized
• Can follow directions
• Has a good attitude and works well as part of a team
• Is willing to learn Ashley B’s recipes, methods, and kitchen standards
• Can handle being on their feet and working in a busy kitchen
• Takes pride in doing things the right way

Hours are still being determined, but this will be a full-time position. Since Ashley B’s will be serving both lunch and dinner, the schedule may include mornings, afternoons, or some evenings depending on what works best for the business.

Pay will be based on experience and skill level, with room to grow after training.

Thank you all for the interest in the breakfast pop-up! I got excited about the idea, but after really thinking about everything I’ve got going on right now with the building and getting ready for the move, I realized tomorrow just isn’t realistic.

I’d still love to do this in the future once things settle down a little, because I do think it would be a lot of fun. I appreciate y’all’s understanding, and I’ll definitely post again when I’m ready to make it happen! 😊

A huge thank you to Nola Boggs Serber and Blue Grass Community Action for choosing Ashley B’s to cater the Senior Companion Program Recognition Lunch today at Woodford Event Space in Lawrenceburg.

I truly appreciate the opportunity, your support, and your trust in me to help serve your volunteers and staff.

Today’s menu included roasted pork loin, Ritz cracker chicken, green beans with country ham, mashed potatoes, butter muffins, old-fashioned chocolate pudding cake, and Italian cream cake.

I also want to give a special thank you to my great friend Mona for helping me today. She is always such a pleasure to work with, and I’m so thankful for her help.

And a big thank you as well to Wendy Shouse for referring Nola to Ashley B’s. Wendy is one of my regular customers, and I truly appreciate her support and recommendation.

It was an honor to be a small part of such a special event. Thank you again for supporting Ashley B’s!

Thinking about doing a breakfast pop-up this Friday morning at Ashley B’s and wanted to see if there’d be some interest 👀☀️

I’d be set up in the front yard at 408 West Broadway from 7:00–9:00 AM with plenty of parking available.

Menu would include:
🥓 Bacon, Egg & Cheese On A Bun 🥓
🌭 Sausage, Egg & Cheese On A Bun 🌭
🍌 Jumbo Banana Nut Muffins 🍌
☕ Jumbo Sour Cream Coffee Cake Muffins ☕

The sandwiches would be cooked to order, and the muffins would be sold individually as jumbo muffins. I love cooking breakfast and just do not get the chance to do it very often, so I thought this might be a fun little pop-up for folks heading to work, heading to school, or anybody just wanting to grab something delicious on the go.
