Come hungry Saturday. We're firing up the sample griddle.

Hot off the griddle Saturday morning: Wagyu ribeye, Delmonico, and picanha samples, plus hot links, hot dogs, and our bacon. Cold board with summer sausage and snack sticks. Taste before you buy, that's how we prefer to sell it.

On the table this week:
🥩 Half-pound Wagyu ribeyes and 1 lb KC strips. Only a handful of each. The ribeyes are the perfect size to try Wagyu without the commitment, and they will not make it to 1:00.
🥩 Picanha, sirloins, tri-tip, Delmonicos, skirt and flank steak. Grill weather isn't over yet.
🥓 Plenty of bacon, hot dogs, hot links, summer sausage, and snack sticks. A few brats.

Heads up: no ground beef this week. It'll be back. If ground was your plan, grab a sirloin and we'll tell you what to do with it.

WHO RAISED YOUR BEEF?
That question has been coming up all over Lawton this week, and it's a fair one. Most beef in the grocery case can't answer it. Ours can.

I'm John with Paladin Ranch — veteran-owned and family-run in southwest Oklahoma. I'm a retired Army officer with 33 years of service, and these days the discipline comes home to the ranch.

We raise American Wagyu: fullblood Tajima (the bloodline behind Kobe beef), Akaushi (the Japanese Red), and Tajima-Angus crosses — Wagyu marbling on proven American frames.

Our cattle get no growth hormones, no steroids, no shots or routine antibiotics, and they are never in a feedlot. They're raised in one short, known chain right here in Oklahoma, and processed in small batches by a family meat company. Honest weights, honest labels — the weight on the label is beef.

And to answer the question I've seen asked most this week: no, you do not have to buy a half or whole beef from us. We sell individual cuts — ribeyes, strips, roasts, ground — one steak at a time if that's what you want. (If you DO want a freezer full, we do halves and wholes too, and that's our best price per pound.)

This Saturday at the Lawton Farmers Market we're running the biggest sample spread we've done. Hot off the griddle: Wagyu ribeye, Delmonico, and picanha, plus our hot links, hot dogs, and bacon. Cold board with summer sausage and snack sticks. Come taste it before you decide, that's the whole point.

The one to try: picanha. It's the cut Brazilian steakhouses are famous for, a sirloin cap with the fat cap left on. Most folks around here haven't had it. Saturday's your chance.

Short supply, worth the early trip: half-pound Wagyu ribeyes (we have five or six) and 1 lb KC strips (we have three). The ribeyes are a perfect single serving, and honestly the best low-risk way to find out what Wagyu is about. If one has your name on it, be there closer to 8 than to 10.

Full grill spread: sirloins, tri-tip, Delmonicos, skirt steak, flank steak.

Stocked deep: bacon, hot dogs, hot links, summer sausage, snack sticks. A few brats, but they'll go fast.

One honest note: no ground beef this week. It'll be back soon, and I'd rather tell you now than have you make the trip for it.
