Lately I’ve been making homemade flan using our duck eggs 🥚🍮 and honestly… it comes out extra creamy and rich.
Here’s the simple recipe I’ve been using if anyone wants to try it at home 👇

🍮 Flan Recipe

Ingredients
• 7 duck eggs
• 2 cans evaporated milk (12 oz each)
• 2 cans sweetened condensed milk (14 oz each)
• 1 tablespoon vanilla extract
• 1 cup sugar (for caramel)

Instructions

1️⃣ Make the caramel
• Melt 1 cup sugar in a pan over medium heat until golden brown.
• Quickly pour into your flan mold or baking dish and spread evenly on the bottom. Set aside.

2️⃣ Blend the flan mixture
• Add duck eggs, evaporated milk, condensed milk, and vanilla to a blender.
• Blend gently until smooth (don’t over-blend to avoid too many bubbles).

3️⃣ Assemble
• Pour mixture over the hardened caramel.
• Cover tightly with foil.

4️⃣ Bake (water bath / baño maría)
• Place mold inside a larger baking pan.
• Add hot water halfway up the sides.
• Bake at 350°F for about 60–75 minutes or until set.

5️⃣ Cool & serve
• Let cool completely, then refrigerate at least 4 hours or overnight.
• Run a knife around edges and flip onto a plate.

Duck eggs make the flan extra creamy and richer than regular chicken eggs.
