We try to do Tuesday Farm Boxes most weeks, but occasionally will skip a week so that we can focus on farm production! This depends on many factors including our planting schedule, harvest windows, the weather etc. We assess whether or not we will be doing a Tuesday Farm Box with a field walk on Sunday evenings. If you do not see a Farm Box published by mid day on Monday - there is no Farm Box for that week.

Directions:
We are on Oatka Trail about a quarter mile east of Circular Hill and a half mile west of Gully Road. Our driveway is on the south side of Oatka Trail.

We often get asked "How do you have cucumbers and zucchini so early in the season?!" This is how :)

We plant early into the soil in one of our High Tunnels. We prune runners and trellis the cucumber plants vertically. The plants enjoy the extra heat inside the tunnels, and we irrigate with drip tape laid along the rows!

Garlic Scapes are the top section of planted garlic that is removed prior to garlic harvest. Scapes are more mellow and less spicy in flavor than regular garlic. They are delicious in stir fries, in a sauce, or in a dressing. If you're unsure how to use garlic scapes, follow any recipe with garlic and swap green garlic scapes instead. To prepare them, chop the entire length of the scapes and then use as you would chopped garlic. Here is a link to a delicious Garlic Scape Pesto recipe: https://www.allrecipes.com/recipe/199868/garlic-scape-pesto - Adding in the Kale Mix to the ingredients will make a darker green Pesto with similar taste and a larger amount to share!

Oatka Creek Farm worker Andy also highly recommends this Garlic Scape Salad Dressing recipe https://dinnertimesomewhere.com/index.php/dinner/salad-dinner/garlic-scape-salad-dressing/?utm_source=Pinterest&utm_medium=organic
with the following ingredients:
3 heaped tsp. of Garlic Scapes, finely diced
1 tsp. Dijon Mustard
1 tsp. Honey
⅓ cup Olive Oil
Juice of 1 Lemon
½ tsp. Red Wine Vinegar
½ tsp. Salt

Directions:
We are on Oatka Trail about a quarter mile East of Circular Hill and a half mile West of Gully Road. Our driveway is on the south side of Oatka Trail. A tractor and sign will be placed at the farm entrance during the Tuesday box pickup time frame.

What is Green Garlic?
Green garlic is young garlic with tender leaves that is harvested early in the season before the bulb is fully formed. Green garlic is more mellow and less spicy in flavor than regular garlic. It is delicious in stir fries, in a sauce, or in a dressing.
If you're unsure how to use green garlic, follow any recipe with garlic and swap green garlic instead. To prepare it, trim off the bottom roots and then use the tender white and light green parts.
