We're so excited to be back every Saturday at the outdoor . We've been loving all the spring goodies we've been finding there like rhubarb, asparagus, ramps, and fresh salad greens! Here's a rundown of what types of fresh mushrooms you'll be able to find from us this spring 🌸🍄:
🦁 Lion’s Mane
Flavor & Texture: Delicate and subtly sweet, lion’s mane softens when cooked and has a meaty, almost seafood-like texture—often compared to lobster or crab. It soaks up sauces and seasonings beautifully, making it incredibly versatile.
💙 Blue Oyster
Flavor & Texture: Mild and nutty with firm, chewy caps and lightly crunchy stems. Blue oysters are a great all-purpose mushroom—easy to cook and packed with savory depth.
🤍 Pohu Oyster (aka Pearl Oyster)
Flavor & Texture: Subtle and slightly sweet, with a soft, buttery texture when cooked. These tender mushrooms are especially good at absorbing seasoning and sauce flavors.
🍃 Pioppino
Flavor & Texture: Earthy, nutty, and rich with a light umami note. Their long stems stay slightly crisp when cooked—think of the texture of just-tender asparagus.
👑 King Trumpet (King Oyster)
Flavor & Texture: Dense, meaty, and savory with a mild flavor and rich umami depth. The thick stems are the star—satisfyingly chewy and great for slicing, shredding, or even scoring and pan-searing like scallops.
You can bet we'll be adding in some shiitakes and foraged mushrooms as the season goes on too, so keep an eye out for those - they go fast!
