Rock picking looks a little different for our kids than it did when we were growing up. Watching the next generation handle this work with better tools and a little more comfort gives us a good laugh, but it also makes us grateful for the progress this ranch has made.

We are getting this new ground cleaned up before the freeze settles in. Once it is ready, it will raise hay and provide grazing. The grasses on this land are exactly what support our grass fed and grass finished program. Healthy pastures grow healthier cattle, and healthier cattle make better beef.

Big news for our Utah County friends, and everyone in between!

For years, many of you have ordered High Meadows Beef when we made the trip down from Idaho. Some of you even met us at Riley’s Taste of Sunshine in Payson to pick up your orders when we came through.

That worked for a while, but it was never as reliable as we wanted it to be. Starting this week, that changes.

High Meadows Beef is now consistently available for pickup at Riley’s Taste of Sunshine, located at 1147 S Main St, Payson, UT 84651. We’ve placed one of our freezers right inside their storefront, which means you can now count on having our beef available on a regular basis, not just when we’re passing through.

Our first delivery to stock the freezer will arrive this Monday between noon and 1 p.m.

To be included in this week’s batch, please place your order by 10 a.m. Monday. We’re bringing about two full beefs’ worth of cuts, and orders will be filled on a first-come, first-served basis.

If something sells out, don’t worry. We’ll add you to our next delivery and reach out directly to confirm when your order will be ready.

You’ll also notice a new ordering process on our website. When you submit your order, you’ll get a confirmation email, but your card won’t be charged right away. Since many of our cuts are priced by the pound, we process payments manually after we’ve packed your order. You can even edit your order up until the Monday deadline.

If you live somewhere along I-15 but outside Utah County, you can still place an order and add a note in the special instructions with your preferred exit or meet-up location. We’ll coordinate with you directly to make it easy.

This partnership with Riley’s Taste of Sunshine is something our family, Riley’s family, and this community can be proud of. We’re here to stay, and we’re grateful to keep serving families who care about where their food comes from.

We know how hectic summer evenings can get—swim lessons, work schedules, endless to-do lists.

The last thing you need is to wonder what’s for dinner?

That’s why we’re sharing a simple, hearty recipe your family will actually be excited to sit down for.

No fancy ingredients.

No complicated steps.

Just real food and real connection around the table.

🍔 One-Pan Cheesy Beef & Rice Skillet
(Ready in under 30 minutes)

You’ll need:

1 lb High Meadows Ground Beef
1 small onion, diced
2 cloves garlic, minced
1 cup long-grain white rice
2 ¼ cups beef broth
1 can diced tomatoes (14.5 oz)
1 tsp salt, ½ tsp pepper
1 tsp smoked paprika (optional)
1 ½ cups shredded cheddar cheese

To make:

In a large skillet, cook ground beef and onion over medium heat until browned. Drain excess fat if needed.

Add garlic, rice, broth, tomatoes, salt, pepper, and paprika. Stir well.

Bring to a boil, reduce to low, cover, and simmer for 18–20 minutes (until rice is tender).

Sprinkle with cheese, cover again until melted—about 2 minutes.

Serve with a side salad or fresh fruit, and enjoy!

This dish is cozy, filling, and made for busy nights when you still want to bring everyone together.

Make it your own:

Swap in black beans, taco seasoning, or veggies for a Tex-Mex twist.

First up we have our recommendation for how to effectively thaw your favorite cut of grass-finished beef!

HOW TO THAW GRASS-FINISHED BEEF FOR BEST FLAVOR & TEXTURE

SECTION 1: Refrigerator Method (Recommended)
• Place your beef (still packaged) on a plate or in a container
• Thaw in the fridge for 24–48 hours, depending on cut size
• This method keeps moisture in and helps preserve tenderness

SECTION 2: Cold Water Method (Faster Option)
• Keep the beef sealed in its packaging
• Submerge in a bowl of cold water
• Change the water every 30 minutes
• Most cuts will thaw in 1–3 hours

Avoid This:
✘ Don’t thaw in hot water or the microwave
✘ Quick-thawing can damage lean grass-finished meat and make it tough
