This last weekend we represented the Williamson County Deputies Association as one of the 45 teams at the Smoking Hot Blue Santa Cook Off sponsored by the Round Rock Police Department. This is a great event and the proceeds go to help the PD bring a lot of happiness and support to families who need it.

When it was said and done, we ended up with-
13th in Beans
3rd in Cooks Choice
7th in Ribs

It was great to have so many friends out offering help and support! You all are family to me! Tony, Brandi, and almost the entire English Clan; Lori and Woody...always great to have you there. Special thanks to my buddy Brian Bickley who has cooked with me at the last two events. This time he brought his son Brandon...and we put him to work! Now, Brian not only got me through all the cooking, but noticed I had my tickets mixed up at awards and we had actually got the calls in Cooks Choice and Ribs. I did not care about making that walk of shame!

Congrats to Bubba Fatz on Reserve and my friend Brett Mckenzie Boren for taking a well deserved Grand Champion!

Four weeks from today, CCQ BBQ will be changing colors and competing as team WCDA at the Operation Blue Santa BBQ Cook Off at the Dell Diamond in Round Rock. This is the second year representing the Deputies Association at this event, and am very proud to do so! Please mark your calendars, May 12 -13, and come out and say hello. 👍

The 2017 Cedar Fest BBQ cook-off is now in the books! This was the first event cooking with my friend Brian Bickley, and we had a great time! The meat categories did not bring us the success we wanted, we did take first place in the winner-take-all Cooks Choice event! SHRIMP DIABLO RULES!
This was also the first Cook off Big C did with me from beginning to end. She even got involved in making those Diablos!
Congratulations to all my other friends who had walks today. A huge thank you to the team at the Cedar Park Chamber of Commerce. Tony Moline, Lyndee Pena Matthews, Jessica Grate, you make this event better every year! Thank you to my team that helps me do what I love to do... Mosaic Dentistry, the Anthony Hernandez, Jr Agency, and Quality Brother Automotive.
Please look to them for your dental, insurance, and automotive repair needs. All three are the best in the are for what they do!

For this Super Bowl party, we did something different, a Pork Belly Braid. Here are some pics of the finished product, along with a few pics of the process. It started with a standard, raw pork belly, portioned into a few pieces. We did one large braid (for sandwiches or entrees), and two smaller braids (for sliders). Braiding the belly allows for more surface area for rubs and marinades to get to. One small braid was marinated with an Asian flair, and dusted with five spice powder. The other two were straight up BBQ. Tied off the ends with butchers twine, or you can use a needle if you have one. Rubbed the night before, wrapped in plastic and refrigerated. Smoked the next day over cherry wood at about 250 degrees. The Asian braid was finished with a honey-siracha glaze, the other two with the house Q sauce. Served with a chipotle mayo and and Asian drizzle.
