Meet the newest member of the family! Julio is not quite 6 weeks old and weighs just over 7 pounds but he'll probably get close to 100 pounds as an adult German Shepherd. Our dog Sadie is doing great with him, not the least bit jealous and learning to be gentle. I'd forgotten what it's like to have a baby - this morning at 3am I was outside walking him in the garden, but totally worth it.

I was going to wait until I felt more settled or prepared for a new puppy, but then I had kind of a revelation and decided I should stop postponing things that make me happy. I often hear the phrase "Pura Vida" here which is about living life to the fullest and embracing happiness. I'm loving life in Costa Rica and learning to enjoy the slower pace.

Almost every town in Costa Rica has a church with beautiful architecture, and next to it you will find a park where families enjoy relaxing. I live on the edge of a small mountain town, San Rafael de Heredia, and the peaceful feeling I get walking through town is indescribable.

The bakeries are really tempting - in the mornings I see people carrying fresh baguettes. I'm still working on getting out of my old "stockpiling" mindset and getting into a new groove of buying things super fresh as I need them from the butcher, baker, farmers market and local families.

The climate here is so comfortable you don't need heat or air conditioning. I'm trying to be more intentional about minimizing my carbon footprint so I'm doing more walking instead of driving. Pura Vida!

Looking up at blue sky from under a mango tree. The rainy season has started here in the Central Valley of Costa Rica but it is actually very pleasant. Mornings start out with blue skies and temps in the 70s. Might rain for 2 hours in the afternoon, but since the time is pretty predictable, it's easy to plan around it.

During the rainy season, you can take cuttings from plants and just stick them in the ground. The combination of moisture and warm temps helps them quickly develop roots. I'm going to test cuttings of flowering shrubs like bougainvillea later today.

There are over 900 species of birds in Costa Rica. Today we visited the Rescate Wildlife Rescue Center where they rehabilitate injured wildlife and help to protect endangered animals. The intensity of color in the birds was unbelievable - we saw peacocks with a gorgeous shimmery shade of blue, toucans with bright yellow bills, and these Scarlett Macaws with a vibrant red. beauty

There is a very special bee here in Costa Rica called Mariola. They are extremely small but produce a wonderful honey with medicinal properties called Angel Honey. Since they are stingless, you can get very close to watch them work.

Meanwhile, back in Leavenworth, we had a really nice fall honey harvest. Paul will be at Earth Fest on April 22nd, 11am to 4pm, at Enchantment Park selling honey and other products from our honey bees. It will also be a great opportunity for kids to learn more about bees and native pollinators.

Enjoying a beautiful sunset in San Ramon, located in the Central Valley of Costa Rica. I'm experimenting with different plants and propagation methods, like starting from seed vs. cuttings. I am growing some of my usual veggies like lettuce and tomatoes, but I'm really excited to see my papaya and passion fruit seedlings continue to thrive after my first attempt at growing them. There are so many options for things I could grow, I feel like a kid in a candy store. I am trying to make time each day to stop and appreciate all of the good things that surround me - today I'm celebrating new friends, beautiful flowers and a feeling of great joy.

Happy New Year from sunny Costa Rica! I am starting off the year by making chocolate. The big orange cacao pod is how they look coming off the tree (but they can be different colors). When you crack them open, the inside contains beans covered with a white membrane. The first step is to ferment them by leaving them in a covered bowl for a week to develop the flavor. After that, I'll roast them and end up with cacao nibs. Then I can try different combinations of things like sugar and vanilla, or maybe some dried milk to make it creamier. I've never made chocolate before so it's a fun experiment. Perfect for me because I am crazy about chocolate! Here's wishing you get to experience new things in 2022 that bring you joy.

Took a trip to Nicaragua today with beautiful scenery all along the way. The wildlife in Central America is incredibly diverse - it is so cool to see how animals adapt to their environment. It was hard to see the iguanas until I realized they were up in the trees, barely visible thanks to great camoflauge, not on the ground by the river where I expected to find them. Another day in paradise!

I have a new favorite coffee and am using a chorreador, the traditional pour over method with a bag suspended above the cup. comes from a local family - Wilson and Elsy operate a private tour business here in Costa Rica, , so when the pandemic devastated tourism, they responded by being resourceful and worked to develop this brand of coffee. Wilson was the first person my son Derron and I met when we moved here - he was so friendly and helpful, I knew we were going to love it here. The coffee harvest is just beginning in Naranjo, one of the main coffee growing regions in Costa Rica. Look carefully and you will see people in between the terraced rows carrying bags as they pick. Like raspberries, the harvesting is done by hand for most varieties, and the pickers have to carefully select the ripe ones. This means there are multiple harvests as the coffee continues to ripen on the plants, and at the end of the season, all of the culls need to be removed to prevent attracting damaging insects. There is mainly Arabica planted here (considered to have the best flavor), but some growers are experimenting with other varieties including some hybrids that are more disease resistant (rust is a problem here since it thrives in the moist environment of the rainy season). So much to learn! I feel fortunate to have a front row seat to watch the harvest from my terrace. How cool is that?
