Al pastor tacos. They take a bit of work but are a labor of love. Probably one of my 3 favorite foods on earth. Ironically, shawarma is another one and historically that is where al pastor originated as Lebanese immigrants came to Mexico. Perfection!

Our Beef Tallow and Herb Crusted Prime rib is our favorite way of making this holiday classic. After getting a rub down with beef tallow and a garlic herb paste the standing rib roast is smoked to perfection. Our prime rib is always a hit with guests and the methods used are simple.

Looking forward to getting back in the swing of competition cooking after a long Covid hiatus. We are looking forward to cooking this weekend at BBQ and Fly In on the River in Excelsior Springs.
