Featured Recipe: Grilled Lemon Garlic Chicken Kabobs
Ingredients:
1 (about 1/2 lb each) green or red sweet pepper, cored, seeded, cut in 1 1/2-inch pieces
1 (about 1/2 lb each) white onion, peeled, quartered, cut in 1 1/2-inch pieces
1 pkg (1 lb each) Wegmans Organic Lemon Garlic Marinated Chicken Breast Cutlets, cut in 1-inch pieces
Salt and pepper to taste
4 tsp Wegmans Pure Olive Oil, divided
Optional: Wegmans Lemon & Garlic Marinade, for basting
Directions:
Preheat grill on HIGH 10 min. Coat cleaned grill grate lightly with oil.
Assemble kabobs by alternating peppers, onions, and chicken on each of 4 skewers. Season with salt and pepper; drizzle each with 1 tsp oil.
Place kabobs on grill; close grill lid. Reduce heat to MED-HIGH.
Grill, covered, 16–18 min, turning every 2–3 min, until internal temp of chicken reaches 165 degrees (check by inserting thermometer halfway into thickest part of chicken).
Optional: Brush cooked side of chicken with additional marinade.
