Brisket is an amazing cut. No smoker required for this great pastrami. I also throw brisket in a crockpot for an all day cook and then chop it with my kitchen shears to top baked potatoes (with cheese and barbecue sauce or a dry seasoning mix and cheese sauce) or fries (with gravy for faux poutine). Play with your food!

Milligan Creek Farms will be at the Farmers Market of Lewisburg this Saturday, August 8 from 8 am until noon at the WVSOM health parking lot. They’re sharing a great example of what you can make from their beef. Homemade pastrami baked in the oven after a three‑day marinade. It turned out beautifully and shows just how versatile their briskets can be. They’ll be packing up early at 11 so they can head to the Lewisburg Literary Festival, so be sure to stop by before then.

What’s a little rain to a farmer wanting their grass to grow?! We are here at the market with steaks for your Memorial Day grill, and roasts, ribs, and shanks for your crockpot to stave off this unseasonable cold, and ground beef for those days you don’t want to think and bones for your pup!

Come see us this Saturday!

Milligan Creek Farms is rolling in this Saturday, May 2, with a beautiful spread of their natural, grass‑fed beef. You’ll find steaks for the grill, roasts for slow suppers, brisket, shanks and ribs, plus soup bones and dog bones for your four‑legged friends. They’ll also have rich beef fat ready for rendering into tallow.

Join us at The Farmers Market of Lewisburg from 8 to noon at the Robert C. Byrd Clinic parking lot. Fresh air, good food, and neighbors gathering — it’s the best way to start a May morning.

Looking for suet? Render it down (just melt it! Stovetop, crockpot, or oven at 200 F) to use the tallow to cook with.

I have the quality of suet you want in your diet — natural and grass fed, without the unnatural additives that congregate in the fat and bones of animals. To make sure I have suet for you at the market on Saturdays, give me a shout ahead of time.

I took this pic at the Museum of Justice in Nottingham, England. Suet pudding, anyone?! 😳
