Made some lasagna today. There are so many types, you do you. Here are a few tips. 1) if using ricotta, make sure it has only 3 ingredients- milk, vinegar, and salt. A decent one in stores is Galbani whole milk. Make sure it's the "Classic", their other ones have additives. If using mozzarella, go for part skim and not fresh or whole milk, part skim has less moisture keeping your lasagna from getting too watery. Use fresh or dried pasta, not the pre-baked/oven ready noodles. If using the dry pasta, make your sauce a little waterier to soften the noodles while they cook, I don't pre-boil mine, I let the sauce flavor the noodles while they soften them. For dry pasta, make sure the layer of sauce is in contact with the noodles. Enjoy!

DiCamillo's bread makes some of the best croutons out there. I used to use French baguettes, but the lightness of the DiCamillo's is better. I usually wait for it to start to dry out right before it gets some mold, but you can use fresh bread and cut it in cubes and just dry it in the oven at 250-300F for 5-10 mins. Then toss them with salt, garlic powder, herbs (oregano, thyme, sage- I like Herbes de Provence) and olive oil and bake at 350F for 5-10 min. until lightly browned. Better than any store-bought croutons.

Best ways to get more juice from squeezing citrus. 1) Put in the fridge to cool, it helps them retain their water content. 2) When squeezing, squeeze the first half, remove and squeeze the other. Then put the first half back on top of the 2nd squeezed half and squeeze both. You'll get considerably more amount of juice.

Tip #9- Learn how to cook rice. Start by following the package instructions, then tweak them if needed. I bought a rice cooker when I was honing my sushi skills. I thought it would make life easier. Not really. Rice cookers can make good rice easily, but it takes twice as long. Maybe useful during a large meal prep when burners and time are a challenge. For me, I never use the rice cooker, I can make perfect rice in 25 mins compared to the cookers 45 mins. The 2 things that trip people up on cooking rice is washing the starch out of the rice and letting it dry, then steam it long enough after cooking. Wash the rice 4-5 times to rinse the starch out and let the rice steam for 7-10 mins before fluffing. Pro tip: always season you rice with salt, and don't be afraid to season it with spices and herbs that compliment your main dish.
