Even' Star Farm

Even' Star Farm Fresh, organic produce all year round from Southern Maryland! THE HISTORY OF EVEN' STAR ORGANIC FARM
Our 104 acre farm is located in St. Mary's County, Maryland.

All of our 54 acres of open land and 50 acres of forest are certified organic. We steward our soils and our ecosystems to maximize biodiversity, to protect breeding habitat for uncommon or threatened species, and to promote environmental and watershed health. We lovingly nurture our land to minimize habitat disturbance. We grow large amounts of flavorful and impeccably safe foods without endangeri

ng the ecosystems, our workers, or ourselves. We farm using only those organic practices that truly respect the environment. We build strong and lasting relationships between our farm and our customers, by growing great foods that are both affordably priced and that have a minimal environmental impact. By feeding large numbers of loyal customers, by constantly managing risk, by diversifying, and by working most diligently, we keep our business foundation financially sound. Great foods, great sales, and loyal customers build strong farms. We sell our products through community-supported agriculture subscriptions (shares), at the Chevy Chase Farmers’ Market, and wholesale to several universities, stores and restaurants in the DC metro area.

Vetch (the purple flowers in the picture) is a lovely cover crop. Our friend for 25 years, adding nitrogen and tilth to our soils, so treasured for our farm’s stewardship. And pollinators feed on vetch all spring!

Look close: adorable frogs! They love our melon and squash transplants, present on Evenstar’ farm right now as we plant our summer crops. The farm is a haven for so many species. That brings unspeakable joy to our hearts.

Tomorrow’s market brings you incredible flowers (peonies and poppies especially), spring onions, green garlic, and other delicacies for your dining pleasure and easy meals!

See you then and there, tomorrow in DC. We return to Home Grown May 23.

In the next delivery, CSA members will receive four kinds of greens including one rare one: escarole. We are growing this for our mom/mother-in-law, who adores it raw or cooked. Us, maybe not so much in the raw form, but this week we discovered how delicious it is in the classic Italian green and garlic soup.

See the recipe at the end of these photos and in both of Brett and Julia’s cookbooks “The Farmer’s Kitchen“ and “The Farmers Market Cookbook”. So easy! We omitted the white wine, pasta, and the options. Brett says it’s among the Queen of Soups!

Try this fabulous Cantonese Noodle soup with today’s CSA delivery of Even’ Star Farm winter Tat Soi greens.

We improvised by adding a handful of rehydrated Even’ Star sh*take mushrooms and then some roasted sesame seed oil at the end. For the best flavor, be sure to use only the greens that you will need for immediate consumption. Add fresh greens to any leftovers.
