Garden tomatoes → something I’ll be putting on everything. 🍅
I gave these cherry tomatoes a warm, slightly spicy twist with harissa seasoning. Roasting them low and slow-ish lets the tomatoes burst and mingle with the garlic, spices and olive oil, leaving you with plenty of that ridiculously flavorful oil at the bottom of the pan. Do not waste that oil!
Harissa Roasted Cherry Tomatoes:
🍅 Cherry tomatoes
🫒 Olive oil
🧄 Minced garlic
🌶️ Harissa seasoning
🧂 Salt + black pepper
Add a generous drizzle of olive oil and minced garlic to a baking dish, then sprinkle in the harissa seasoning. Add the cherry tomatoes and toss until they’re well coated in all that seasoned oil. Finish with salt and pepper.
Roast at 350°F for about 30 minutes, or until the tomatoes are soft, blistered and beginning to burst.
And that’s it. Simple ingredients, BIG flavor.
These are perfect tossed with pasta, spooned over toasted bread, served alongside eggs, added to grain bowls, or smashed into a quick sauce. And that harissa-tomato oil left in the pan? Toss it with pasta, whisk it into a vinaigrette, or mop it up with a good piece of bread. 🥖 🍝 🥗 🤌🏾
I love finding new ways to use the cherry tomatoes coming out of my garden, especially when the recipe is this easy.
Save this one for the last big haul of tomato season! 🍅🌿
