I'm trying mozzarella for the third time. This attempt is with a new recipe that calls for a very slow temp increase so, here we are, waiting.
I'm sure there is a lesson here about how a slow life is a good life but if it isn't the life you're after it probably sounds like foolishness.

Tonight's adventure in goat's milk was supposed to yield mozzarella cheese. It didnt. There is no stretch, no smoothness, to my cheese. I'm going to blame the thermometer that decided to die in the middle of the process. But mistakes are part of the learning process...I'll try again just as soon as I have enough milk.

Today's goat milk adventure was cajeta - Mexican caramel! It was definitely a success. Now to make some goat milk ice cream to drizzle it over.
