Garden update. Lots of beautiful things growing… as well as managing what Mother Nature throws at you!! We’ve solved our little groundhog problem (we hope🫣) and the tomatoes, peppers, cucumbers, squash, potatoes, okra, herbs and more are doing well!! (Our greens and brassicas got pretty well chewed up - lovely to create a salad bar for our furry little adversaries😜🤣🌱) We’ve fully fenced off a plot I’ll be replanting this week. CSA program starts next weekend! Members look for an update email later today!

Really excited to launch this collaboration with !! I’ll be picking up ā€œsecondsā€ every week to turn into delicious pickles, ferments, sauces, salsa, and more!! Some drop into the Lane Allen market later this week and see what we’re up to!! We’ll be planning a tasting at the store soon!!

Chicken tinga de pollo.. one of my favorite versions of a chicken taco.. I tweaked the traditional recipe a bit.. I like to use chipotle in adobo and fresh sweet peppers along with sweet onions. With garlic and fresh oregano from the garden..
I marinated skinless, boneless thighs in and lime juice with adobo and garlic for 4 hours- then roast them in the oven at 425 until just slightly charred.. then let rest to shred.. While the chicken is roasting (don’t boil it please!) I sautĆ© sliced sweet onions, peppers (red bell, lunchbox, cubanelle) chipotle adobo chilies, garlic and oregano and avocado oil. Let these veggies sweat/fry down hard until browned and tender.. then add a fresh diced tomato, a splash of cerveza and 1/4 cup of chicken stock. Cover and let simmer on low heat for an hour.. Then add the shredded chicken.. and maybe another 1/4 cup of stock.. stir and cook down for another hour on low until the liquid reduces - consistency should be a thick, chunky stew when ready ( and this will actually taste better the next day) I usually use (and traditionally) corn tortillas for this - but I only had flour today when I took the photos.. Here I garnished with pickled red onions and roasted salsa roja. I also add fresh crumbled cotija cheese and fresh chopped cilantro and onions with a squeeze of fresh lime. So rich and spicy but finished with bright flavors this smokey adobo chicken taco is FIRE! šŸ”„
