Tis the season for Hop Shoots. What are hop shoots? Each plant (or hill) will produce one or two dozen sprouts in the spring. We only train two or three to climb the string and the rest usually head for the compost bin. Well this year this springtime delicacy has gone to 40 Paper and Francine in Camden. So head on over to either of these fine establishments to sample what the chefs have prepared.

More on wet hop brewing: Just picked hops are about 80% water so you would need to use about five times more wet hops to have the desired effect on your finished beer.

In addition wet hops must be used within about twelve hours of picking as they deteriorate rapidly if not dried. Contact us for more info.
