We added sunchokes (aka Jerusalem artichoke) to our garden last year. They grow like sunflowers getting about 8 ft tall their first year. But they produce tubers underground that are edible and very similar to potatoes! We left all the tubers in the ground overwinter. Out of curiosity I dug some up to try out in the kitchen this morning. YALL, they are soooooo good! Pan seared with salt, pepper, coriander, parsley, and topped with lemon butter!
Okay, but there's more! The whole plant is also used to make some of our natural pesticides! It's one of the core plants used in the JADAM natural pesticides regiment. This plant will be protecting your veggies on our farm until they are harvested and picked up by you!
