Sauder’s Eggs

Sauder’s Eggs From our small family farms to your table, every egg we deliver is rooted in sustainable practices & raised with care.

Frank Sauder started his door-to-door business in the 1930's, during the Depression Era. Several mornings a week, in the early hours before dawn, Sauder departed his Lancaster County farmhouse and headed for Philadelphia with a small truckload of the freshest vegetables, poultry, and eggs available from his Lancaster County farm neighbors. Sauder's reputation for quality and fair prices grew, and

so did the number of his customers. Frank Sauder's early morning journeys marked the beginning for the family of companies that now comprises one of America's leading processors and marketers of fresh eggs. The wholesale egg business began to expand in 1947 when Frank Sauder's son, Raymond, joined him in the family business. In just a few years, door-to-door egg sales grew into a top-quality egg wholesaling enterprise. Today, Raymond's son, Paul, is the third generation of Sauders to operate the business. Paul has built upon the family traditions of integrity, product excellence, and fairness to customers, producers, and employees. With the help of a highly motivated work force and a skilled management team, we have grown the company from a single location in Lititz to its present size, with three marketing arms and five processing plants.

3 large eggs
1/3 cup of flour
1 cup of milk
1 pinch of salt
1 ½ teaspoon baking powder
1 tablespoon vanilla extract
1 teaspoon cinnamon
¾ cup white chocolate chips
¼ cup of powdered sugar (optional)

Directions:
1. In a mixing bowl, combine flour, salt, baking powder, white chocolate chips and cinnamon.
2. Stir the contents together with a whisk or fork, ensuring all dry ingredients are properly mixed.
3. Use a separate dish to mix the milk, eggs and vanilla extract. Whisk thoroughly until all ingredients are combined.
4. Slowly pour the wet ingredients into your mixing bowl of dry ingredients, whisking the contents together. Mix the ingredients rapidly until you achieve a smooth and creamy texture.
5. Pour the mixed contents into a square dish large enough to fit each slice of bread.
6. Lightly spray a frying pan with cooking spray or oil over medium heat.
7. Soak each slice of bread in the mixture. Use a spoon to pour mixture on edges and any dry areas. Let excess batter drip off each slice before transferring it to the stove.
8. After waiting 4 to 5 minutes for your grill to warm up, place each bread slice on the skillet. Do not overcrowd your pan.
9. Flip each piece after browning. Turn after roughly 4 minutes for optimal cooking.
10. Serve immediately after cooking and sprinkle with a dash of powdered sugar for an extra-sweet treat.

When life gets busy, these spinach and ham egg bites are an easy, nutritious for on the go. 😋 They're a fun, bite-sized recipe for picky eaters too. Save the !

Ingredients:
12 large eggs (organic, if preferred)
2 cups of smoked ham, diced
½ cup of red bell pepper, diced
½ cup of onions, chopped
1 cup of fresh spinach, chopped
1 cup of cheddar cheese, shredded
1 teaspoon of olive oil
1 teaspoon of salt
½ teaspoon of freshly ground black pepper

Directions:
1. Preheat your oven to 370° F and lightly coat a 12-cup muffin pan with cooking spray. Set aside.
2. On a chopping board, use a sharp cutting knife to dice and chop the bell peppers and onions into smaller chopped pieces. Rinse the spinach in cold water and pat dry. Break the spinach apart by hand, or use a knife to slice it into smaller pieces. Set aside.
3. Cut the smoked ham into 1-inch, diced pieces. Add a teaspoon of olive oil to a medium skillet over medium heat. Once warm, add the pepper and onions to the pan. Tilt the pan to cover the vegetables with an even layer of oil.
4. Reduce the heat to low as the vegetables begin to sauté and add the cooked ham to the skillet. Sprinkle the spinach on top and cover the pan with a form-fitting lid. Allow the contents to sit on low heat for approximately 5 minutes.
5. In a medium mixing bowl, carefully crack each egg into the dish and stir. Add the salt and pepper to the dish. Whisk until all the eggs are thoroughly combined. You shouldn’t be able to see the yolk separate from the whites. If you prefer, you can use a mixer instead.
6. After 5 minutes, remove the vegetables from the heat and allow them to cool for roughly 2 to 3 minutes. Carefully pour the vegetable mixture into the mixing bowl with the eggs. Whisk until all ingredients are thoroughly combined.
7. Carefully pour an even layer of the egg and vegetable mixture into each muffin cup of the pan. Then, divide the cheddar cheese evenly amongst the 12 portions and sprinkle the cheese on top of each muffin.
8. Place the baking pan on the center rack of your oven and cook for approximately 30 minutes. Once the eggs are fully set and the cheese begins to melt, remove the tray from the oven and serve immediately.
