This is a photo of my dad Val, the name sake of our coffee steak rub. It was taken the last Sunday of his life that he was well enough to make it to church. He was a great example of what a father should be, not just to his kids but to so many people he came in contact with. Also in the picture, on the right, is pastor Jelani who just so happened to preach today. Happy Father’s Day Dad!

Elote, or Mexican street corn, is a celebration of simple, flavorful ingredients coming together in the most delightful way. Imagine perfectly grilled corn, kissed by smoky char, and then generously coated in a creamy mix of mayonnaise and sour cream. It’s all topped with crumbled Cotija cheese for a salty, savory touch, a dash of chili powder for just the right amount of spice, and a squeeze of fresh lime for a burst of brightness. Each bite is a delicious blend of textures and flavors that’s both comforting and irresistible—a true reminder that the best things in life are often the simplest.
