This easy one pot recipe for Chicken Perloo will have your entire family fed and happy!

Riceland rice is so versatile and can be used in a wide variety of dishes!
Growing up on a family farm that raised rice, it has always been important to me. Using rice in dishes I make allows me the opportunity to not only share good food but also share stories about growing up on a farm.
Recipe for Chicken Perloo (adapted from Rodney Scott)
¼ cup olive oil
6 celery stalks in 1/4" pieces
1 red bell pepper chopped
1 large yellow onion chopped
3 tbsn minced garlic
1 14.5oz can diced tomatoes
2 tspn of your favorite BBQ rub
1 tspn kosher salt
6 cups chicken stock
1 cup Riceland long grain white rice
½ of a cooked chicken. I smoked this chicken but a rotisserie chicken would also work great
1 bunch of green onions sliced for garnish
Heat up oil in a heavy pot
Once heated up, cook onion, bell pepper, celery and garlic until the veggies are translucent. About 15 min on med heat
After veggies have cooked, add tomatoes, salt and BBQ Rub and cook until all the liquid has evaporated and the veggies start to caramelize
Once water has evaporated, add chicken stock and bring to a boil
Add chicken and 1 cup Riceland rice
Transfer to 350 degree preheated oven and cook uncovered for 20-30 min until rice has cooked through
Serve in a bowl and garnish with green onion
