Smoky Cherry-Ginger Pork with Balsamic & Wine Reduction
This is one of those dishes that sounds a little questionable until you take the first bite.
Sweet cherries. Fresh ginger. A splash of wine. A drizzle of balsamic. Smoky, tender pork that spent its afternoon becoming ridiculously flavorful.
Tonight, we served it over a rustic roasted root vegetable smash made from potatoes, carrots, and parsnips. The earthy vegetables were the perfect partner for that rich, glossy cherry-wine reduction.
