Sweet corn is back from Smith Farm and it’s as fresh as it gets! We have plenty available, whether you need a quarter dozen, half dozen, several dozen, or enough for the whole family.

It’s tomato season!
With the abundance of cherry tomatoes we have right now, we made two delicious dishes this evening. Momma Adriane went with turkey meatballs, and I made this creamy tomato orzo!

So many of these simple, wholesome ingredients can be found right here at the market—locally grown, all-natural, and clean. There’s nothing better than letting fresh produce shine.

Creamy Cherry Tomato Orzo
Ingredients:

* 1 tablespoon butter or olive oil
* 1 small onion, diced
* 3–4 cloves garlic, minced
* 2–3 cups cherry tomatoes
* 1 cup orzo
* 2 cups chicken bone broth
* 2–3 handfuls fresh spinach
* ½ cup freshly grated Parmesan cheese
* Salt and pepper to taste
* Optional: fresh basil and a squeeze of lemon juice

Directions:

1. Sauté the onion in butter or olive oil until softened.
2. Add the garlic and cook for about 30 seconds.
3. Stir in the cherry tomatoes and cook for 5–7 minutes, gently pressing a few with the back of a spoon until they begin to burst.
4. Add the orzo and stir for 1 minute.
5. Pour in the chicken bone broth, bring to a simmer, and cook for 10–12 minutes, stirring occasionally, until the orzo is tender and most of the broth has been absorbed.
6. Stir in the spinach until wilted.
7. Mix in the Parmesan cheese until creamy. Season with salt and pepper, and finish with fresh basil or a squeeze of lemon if desired.

Fresh, comforting, and the perfect way to enjoy all those beautiful cherry tomatoes this time of year.

These look delicious!! And we’ve got lots of fresh poblanos and ground beef! Yummm!

4 poblano peppers
16 oz cream cheese, softened
1.5 cups shredded cheddar cheese
1/4 cup diced chives
1 Tbsp garlic powder
1 tsp salt
1 tsp pepper
6 pre-formed beef burger patties (or 2 lbs ground beef divided into 6 patties)
Burger seasoning of choice
6 buns

Set oven to broil on high. Place poblanos on a foil-lined baking sheet and broil until skins are mostly black on all sides (rotating every 4-5 minutes).

Place peppers in a covered bowl and allow to steam for 30 minutes. Remove skins and seeds from peppers, then cut 3 of the 4 poblanos in half lengthwise. Dice the other poblano. Set aside.
Preheat grill to 500-550°F.

In a large bowl add cream cheese, cheddar, garlic powder, salt, pepper, diced poblano and chives. Mix together until smooth.
Grill burger patties. Top with cream cheese mixture.

Using same grill temp, toast buns. Remove from heat.
To build a Poblano Popper Burger, lay heel of bun down. Top with burger, then 1/2 half of a roasted poblano, then the crown of bun. Repeat with remaining burgers. Enjoy

No joke… this may be the most beautiful day of produce we’ve seen yet here at the market!

Lewana just brought in the most gorgeous cauliflower we’ve ever laid eyes on. This picture isn’t edited at all—that is its true color! You have to come see it in person. It’s absolutely stunning.

Roast it, bake it, steam it, or blend it into soups or mashed “potatoes.” This is one of those vegetables that’s almost too pretty to eat!

The Clouse family has cherry tomatoes absolutely bursting with flavor, and they are impressive! They also delivered beautiful large heirloom tomatoes along with baskets of Roma and Amish Paste tomatoes, perfect for canning.

Stuffed Bell Pepper Recipe!

½ cup uncooked long-grain white rice
6 medium to large bell peppers
1-2 tablespoons extra virgin olive oil
1 small onion, chopped
2 cloves garlic, minced
2 tablespoons tomato paste
1 pound lean ground beef , (or ground turkey)
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 (14.5 ounce) can diced tomatoes, with juices
1 cup shredded Monterey jack cheese , or another favorite cheese
optional: freshly chopped parsley for garnish

Preheat oven to 350ºF. In a saucepan, follow package instructions to prepare the rice.

Meanwhile, cut off the tops of the peppers and remove the ribs and seeds, then rinse. Lightly sprinkle the inside of the peppers with salt and place them in a microwave safe dish with about 1/2-inch of water. Cover and cook for 3-5 minutes or until they start to soften. Alternatively, you can cover with foil and bake 20 minutes to soften the peppers.

While the peppers are precooking, make the meat filling. In a large skillet, over medium heat add extra virgin olive oil and sauté the chopped onion for 5 minutes, or until translucent. Then, stir in garlic and tomato paste and cook for another 2 minutes. Add in ground beef and cook until beef is no longer pink. Drain the excess fat.

Then stir in oregano, salt, pepper, diced tomatoes and the cooked rice. Let the mixture simmer for about 5 minutes and until the liquid reduces some.
Scoop the beef mix into each pepper and sprinkle the shredded Monterey jack cheese over the tops.

Cover the baking dish with aluminum foil and bake for 20 to 25 minutes. Then, remove the foil and bake for another 10 to 15 minutes and until the peppers are soft and the cheese is melted and lightly browned. Garnish with parsley and enjoy!

It just wouldn’t be summer without making our favorite Full Moon Squash Casserole! Thought we’d share the recipe!

2 cups yellow squash, sliced into circles (about 2 small or medium squash)
1 yellow onion, chopped
1 small bell pepper, diced
2 eggs, beaten
1 10.5-oz can of cream of mushroom soup
1 Tbsp sour cream
1/2 cup whole milk
1/4 cup butter, melted
1 cup grated sharp cheddar cheese
1/2 tsp salt
1/4 tsp black pepper
Panko Bread Crumbs
2 Tbsp butter, cold

Preheat oven to 325˚F
Sauté or bake squash, just until fork tender
In a large bowl beat together eggs, soup, and sour cream. Stir in vegetables, milk, melted butter, cheese, salt, and pepper.
Grease a 9”x13” deep baking dish and pour in cheesy vegetable mixture.
Sprinkle panko bread crumbs over casserole. Cut cold butter into small pieces and dot the top of the casserole.
Bake for 20-30 minutes. Cover part way with foil if top browns too early.
