👩🍳 How to Make It
1️⃣ Prepare the eggplants. Wash the eggplants and slice them lengthwise into approximately ½-inch (1.2 cm) thick slices. 🍆
2️⃣ Salt the slices. Arrange the eggplant slices on a tray and sprinkle lightly with salt. Let them rest for 15–20 minutes to draw out some excess moisture.
3️⃣ Pat them dry. Use paper towels to remove the released moisture from both sides of the eggplant slices. ✨
4️⃣ Prepare the breading station. Set out three shallow bowls. Add flour to the first bowl, beaten eggs mixed with milk to the second, and breadcrumbs to the third. 🥚
5️⃣ Season the breadcrumbs. Mix the panko breadcrumbs with Parmesan, garlic powder, paprika, oregano, black pepper, and a little salt. 🧀🌿
6️⃣ Coat the eggplant. Dip each eggplant slice into the flour, shaking off the excess.
7️⃣ Dip into the eggs. Transfer the floured eggplant to the egg mixture, making sure both sides are evenly coated.
8️⃣ Add the crispy coating. Press the eggplant into the seasoned breadcrumb mixture, coating both sides generously. 🍆🔥
9️⃣ Rest the breaded slices. Place them on a clean tray for 5 minutes to help the coating adhere during cooking.
🔟 Heat the olive oil. Add 2 tablespoons of olive oil to a large skillet over medium heat. 🫒
1️⃣1️⃣ Cook until golden. Add the breaded eggplant slices in a single layer and cook for approximately 3–5 minutes per side, until golden brown and crispy. Add more oil as needed between batches. 🔥
1️⃣2️⃣ Check the center. Make sure the eggplant is tender all the way through. Lower the heat slightly if the breadcrumbs brown before the eggplant softens.
1️⃣3️⃣ Drain the schnitzels. Transfer the crispy eggplant to a wire rack to keep the coating crunchy while you prepare the remaining slices. 🤤
🍅 Make the Homemade Tomato Sauce
1️⃣4️⃣ Sauté the onion. Heat 2 tablespoons of olive oil in a saucepan over medium heat. Add the chopped onion and cook for 3–4 minutes until soft and translucent. 🧅
1️⃣5️⃣ Add the garlic. Stir in the minced garlic and cook for approximately 30 seconds until fragrant. 🧄
1️⃣6️⃣ Add the tomato paste. Stir in the tomato paste and cook for 1 minute to deepen the flavor.
1️⃣7️⃣ Pour in the tomatoes. Add the crushed tomatoes, Italian herbs, salt, black pepper, and optional sugar. 🍅
1️⃣8️⃣ Simmer the sauce. Reduce the heat to low and cook for 10–15 minutes, stirring occasionally, until slightly thickened.
1️⃣9️⃣ Add fresh basil. Tear the basil leaves into the sauce and stir gently. 🌿
🍽️ Assemble & Serve
2️⃣0️⃣ Prepare the plates. Spoon a generous layer of warm homemade tomato sauce onto each serving plate.
2️⃣1️⃣ Add the crispy schnitzel. Place the golden eggplant schnitzels over or alongside the tomato sauce, keeping most of the crispy coating uncovered. 🍆🍅
2️⃣2️⃣ Finish with Parmesan. Sprinkle with freshly grated Parmesan and garnish with fresh basil leaves. 🧀🌿
2️⃣3️⃣ Add a fresh touch. Serve with lemon wedges and a little freshly ground black pepper. 🍋
2️⃣4️⃣ Enjoy immediately! Cut into the golden, crunchy coating to reveal the soft, tender eggplant inside. 😍🤤
💡 Tips for Extra-Crispy Eggplant Schnitzel
🔥 Use panko breadcrumbs: They create a lighter, crunchier coating than regular breadcrumbs.
🍆 Slice evenly: Keeping the slices the same thickness helps them cook at the same rate.
🧀 Add Parmesan: It gives the crust a delicious savory flavor.
🍅 Serve sauce on the side: For maximum crunch, dip each bite into the warm tomato sauce instead of covering the schnitzel completely.
🌿 Finish with fresh basil: It adds wonderful aroma and freshness.
