For those of you who don't know, I am the head chef at The Ranch Club in Missoula, a public restaurant within a private golf course. It was a very busy summer. As temperatures cool and golf declines, it opens up a little time for me to work and play with chocolate. The process begins with coloring and shelling all of my moulds. I began this process at the beginning of October. I'm now ready to move on to the next stages; filling, capping and tapping.
