This Sunday April 5th at 12pm, we’re dropping bottles of our Stout Fest winning beer at !

🌌 Pillars Of Creation 🌌

A blend of our Stagg Jr, Heaven Hill, and Bakers Single Barrel Foundation series stouts with toasted coconut added, 16% ABV.

There are only about 30 bottles available, they will be sold first come first served 1 per person. We will also have Pillars on tap!

We will also have bottles of Voidstalker, and a very small amount of our Foundation Single Barrel Aged Stouts available to go!

🐺 ✨ WOLF LAKE COLLAB RELEASE! ✨ 🐺

We teamed up with our homies from after bonding over Malort and south side beer pounding after FOBAB and finally decided to join forces to cook up this banger of a beer. 🤝

🐺 💫 Wolf Lake – 💫 🐺 West Coast Style Pilsner with Citra and Idaho 7 Hops Collab w/ False Idol Brewing, 6.5% ABV.

Brewed with our friends False Idol Brewing out of North Richland Hills, Texas, this crisp and refreshing offering was given a Citra and Idaho 7 hop addition during the whirlpool and dry hop periods, lending bright citrus notes yet still showcasing a simple and delicious malt profile from 3 months of lagering and naturally carbonating.

The can label features a view of the Chicago Skyline back from Wolf Lake in South Chicago where NN Brewer Eric grew up, with the reflection showing the Dallas Skyline representing where False Idol is from. Coincidentally, False Idol’s logo has a Wolf representative of Norse Mythology from which their name stems from, so it all worked out together beautifully.

This weekend, you’re invited to our very first Single Barrel Tasting Sessions!

Attendees will join Eric on a guided tasting through 4 of our best single barrel aged stouts in our collection, with the possibility of some bonus sneak peek pours and surprises 👀.

You’ll learn all about the barrel aging process, beginning at recipe formulation and brew day, to barrel selections and the aging process, and finally the art of blending and single barrel sensory analysis.

$50 gets you in, and includes the following:

- 1x 13oz Welcome pour of Pilsner
- 4x 5oz pours of event only Single Barrel Aged Stouts.
- Brewer led Guided barrel tasting
- Option to purchase event only available 750ml bottes of any/all single barrel aged stouts that will be sampled throughout the session.

Sessions will take place at Noon Whistle Brewing in Lombard and Monochrome Brewing in Chicago.

Oscillation: Voidstalker – Imperial Stout aged in 4yr Willett Family Estate Rye, Buffalo Trace Bourbon, and Vanilla Bourbon barrels for 31 months with 2x Toasted Coconut and Marshmallow, 15.5% ABV.

Awakening from a 2.5+ year slumber in darkness, Voidstalker is then loaded with 250lbs of toasted coconut laying atop a decadent chocolate rye malt forward base stout which aged in 3 different barrels. Each barrel lends its own layer of flavor, with notes of chocolate soaked oak, sweet baking spices, and caramelized wood sugars, and a dose of marshmallow to bring it all together.

750ml bottles and draft hit distro this week coming up, keep an eye on our socials and contact your favorite beer shop to see if they’ll be getting some. We will also drop a list of everywhere we drop off as soon as we do!

Callosum – A mindfully blended combination of a Penelope Valencia barrel aged English Barleywine and a Rittenhouse Rye barrel aged imperial stout. Rested in wood for 2 yrs, 4 months.

Callosum brings together the best aspects of English Barleywine and imperial stout, with bold flavors of deep oak, chocolate covered raisins, sweet caramel, rich cocoa, subtle cinnamon, and a warming spirit finish. 16% ABV.

Category: Fruit Beer.

Strawberry Protoplanetary – English Barleywine aged in 8yr Willett Family Estate bourbon barrels for 3 yrs, 2 months with Strawberry Puree.

An extended aging period lends intense flavors of caramelized wood sugars, chocolate drizzled dates, honey, and toffee. A carefully calculated addition of strawberry puree adds a semi sweet strawberry jam finish that makes this beer truly special. 15.8% ABV.

Both will be pouring at today and tomorrow, and may be available in bottles to go in the near future. 👀

🥥 Oscillation: Voidwalker 🥥 - Pastry Stout Blend, aged in 10yr Buffalo Trace, 19yr Heaven Hill, and Vanilla Bourbon Barrels (Average aging period of 29 months) with 2x Toasted Coconut and Toasted Marshmallow, 16% ABV.

This one is an all out pastry stout beginning with heavy chocolate malt forward base beers, then blended from different barrels thoughtfully considering the huge adjunct additions. The result is a huge, decadent treat layered with deep bourbon wood sugars and dessert levels of coconut and marshmallow.

🍫 Oscillation: Thought Canvas 🍫 - Rittenhouse Rye and Willett Family Estate Rye Barrel Aged Stout (22 months) with Cocoa Nibs, Cocoa Powder, Ceylon Cinnamon, and a touch of Raw Coconut, 15.8% ABV.

An experimental 10 gallon batch, bottled with low carbonation to allow the rye barrel expression to really shine. Subtle adjunct additions intensify the barrel notes of chocolate fudge, warming dessert spices, and toffee.

Available to go in 500ml bottles, 35 bucks CASH ONLY.
