FRUIT CAKE
INGREDIENTS
2 cups (250g) all-purpose flour
1 cup (200g) brown sugar
1 cup (225g) unsalted butter, softened
4 large eggs
1/2 tsp ground ginger
A pinch of salt
1 tsp ground cinnamon
1 tsp baking powder
1/2 cup (120ml) orange juice
1 cup (150g) mixed dried fruits (raisins, currants, chopped apricots)
1/2 cup (75g) chopped nuts (walnuts or pecans)
1/2 tsp ground nutmeg
1/4 cup (60ml) brandy or rum (optional)
Zest of 1 orange
INSTRUCTIONS
Preheat your oven to 325°F (160°C). Grease and line a 9-inch round cake pan with parchment paper.
Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and ginger. Set aside.
Cream the Butter and Sugar: In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. This should take about 3-5 minutes.
Add the Eggs: Beat in the eggs one at a time, mixing well after each addition.
Combine the Mixtures: Gradually add the dry ingredients to the butter mixture, alternating with the orange juice and brandy (if using). Mix until just combined.
Fold in the Fruits and Nuts: Gently fold in the mixed dried fruits, chopped nuts, and orange zest until evenly distributed throughout the batter.
Bake the Cake: Pour the batter into the prepared cake pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
