A little reset looks like this🍋
This rich, cozy, citrusy lemon poppy loaf is made with Brown Cow Cream Top Vanilla Yogurt, which gives it more moisture. This new year is about resetting, slowing down, and making time for yourself, starting with something that can bring a little joy to your plate. 🤎💛 Recipe and instructions below!
Ingredients:
1 cup granulated sugar
Zest of 2 lemons
1/3 cup olive oil
2/3 cup whole milk
2 large eggs
1/2 cup brown cow vanilla yogurt
3 tbsp lemon juice
1 3/4 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3 tbsp poppy seeds
Glaze:
2 cups powdered sugar
1 tbsp lemon juice
2 tbsp heavy cream
Instructions:
Preheat the oven to 350°F. In a large bowl, add sugar and zest of 2 lemons; massage zest into sugar. Add eggs, oil, milk, lemon juice, and brown cow’s vanilla yogurt; whisk until smooth. To the wet mixture, add the flour, baking powder, baking soda, salt, and poppy seeds; mix until just combined. Grease and line a loaf pan; add the batter and bake for 45-50 minutes or until a toothpick inserted in the middle comes out clean. While the loaf bakes, work on the glaze; combine the powdered sugar, lemon juice, and heavy cream. Mix until combined and smooth. Allow the loaf to fully cool before adding the glaze and enjoy!
