🎂🎈☘️ Pretty much the greatest 50th birthday weekend ever. First, a junk cereal feast for me at work (YES, DENTAL.) Then, an AI birthday message with ! Then. Our dinner date at was actually a surprise party with some of my best friends, who drove for hours and brought gifts that touched my heart!! knitted me the most amazing sweater! and my godson stayed over and surprise... We're doing the together! We had an awesome brunch and the next day, a vegan burger . I heard from so many people I love. I am deeply moved and overwhelmed by my blessings. I'm ready for the next 50. I love you guys so much.

🎃🍩 "Fun Day" at my kids school (they can't call it Halloween), and I made another questionable decision to crank out a zillion mini pumpkin spice donuts, two and a half minutes, and six at a time. My recipe is really easy, but it is not oil-free (which I tend to do when I'm cooking for other people, lest they nod their heads in agreement that vegan food just isn't very good. If you're going to make sweets, they should be sweet. Just my opinion.) The recipe is a shortcut, but if you have a donut pan they would probably cook faster. However, I like that these get done on both sides, and I dip them in the vegan butter and then the cinnamon sugar while another batch is cooking.

🎃🍩 Pumpkin Spice Mini Donuts
(for an army)

Ingredients:
3 boxes Spice Cake Mix (I used )
2 (15-oz) cans pumpkin
1/4 cup olive oil
1/4 cup aquafaba

Mix in a big bowl, and let it rest while you melt some vegan butter in one bowl, and mix cinnamon sugar in another. I also added pumpkin spice, and a small scoop of powdered vanilla. I did these in two and a half minute batches. After you dip them in the butter and then the sugar, any little worries you might have about imperfect shapes will disappear! I experimented with some eyeball icing decorations, and decided these were just too pretty as is. The taste was even better. Delicious.
