Once we get the fresh meat from our suppliers, we handcraft it into really freakin' delicious bacon in a process that takes a minimum of 14 days. First we apply our proprietary blends of spices by hand, then dry cure the meat for 11-17 days. After that, we cold smoke the meat for 12-36 hours depending on the specific variety, then let the smoke seep into the bacon for another 24-48 hours. After that, we package it up and ship it straight to you! From the high quality, premium meat we use, to the fresh ingredients we use in our artisan dry cures, to the proprietary hardwood blend we use to cold smoke the bacon, the only thing our bacon has in common with the commodity bacon you can buy in grocery stores is the name!
