I’ve made homemade biscuits for most of my life. I’m 64 and my mom let me make my first batch of biscuits when I was 9yo. I’ve made biscuits with butter mostly and years ago with crisco. But I got my hands on some pure lard (no chemicals). So today I decided to make a batch of biscuits for my husband, my dad & I for lunch with some sauage gravy. And my husband and dad went bonkers about how awesome those biscuits tasted. My husband said they were so fluffy inside and he loved them. I have to admit I think I found my favorite way to make my biscuits 😁!!!

Good old fashioned chicken and dumplings! For this particular batch, I threw my chicken breast in my instant pot cause they were frozen. Pressure cooked it for 12 minutes, with natural release. I seasoned it with 2 tsp of chicken bouillon, 1tsp garlic powder, 1 tsp onion powder, 1 tsp of pepper and some parsley. 1 and a half cups of water. Once it was not cooking in the IP, I took out the chicken and shredded it in my kitchenaid (it works SO nicely). Then, I just followed the recipe the rest of the way. Super easy, really. My husband loves it a lot and we hardly have leftovers. (I add sriracha to my own bowl)

Recipe:

Ingredients

3 cups chicken, cooked and shredded

2 quarts chicken broth

2 cups all-purpose flour

1/2 tsp baking powder

2 tbsp cold salted butter, cubed

1 cup milk

Pepper(to taste)

Instructions

1. Preheat oven to 350F degrees.

2. Spray a baking sheet with nonstick cooking spray.

3. Drizzle a little olive oil on the chicken and season with salt and pepper.

4. Bake for about 45 minutes.

5. Once the chicken is cooked, shred it with two forks.

6. Pour 2 quarts of chicken stock or broth into a large pot and start warming it up on the stove top while you make the dumplings.

7. In a medium bowl, combine flour and baking powder. Then add in cubed butter.

8. Combine using your fingers, fork or pastry cutter.

9. Pour in the milk. Mix it all together.

10. Dust your counter with a generous amount of flour. Place dumpling dough on the counter and dust it with more flour.

11. With a rolling pin, roll the dough out to about 1/4" thickness.

12. Be sure to add flour as necessary to keep it from sticking underneath or to your rolling pin.

13. Using a knife or a pizza cutter, start cutting out your dumplings into squares.

14. Dust dumplings with a bit more flour. The extra flour is all gonna help keep them from sticking but will also thicken your chicken broth some as well when you add them to the pot.

15. Bring chicken broth up to a boil. Add in shredded chicken and stir.

16. Begin adding dumplings one at a time so they don't all stick together. Stir frequently while adding them.

17. Allow dumplings to cook for about 15-20 minutes. You should notice your broth starting to thicken (from the extra flour) and your dumplings may start to sink a little to the bottom because they are soaking up the broth. Take one out and taste test it. It shouldn't have a doughy taste anymore.

18. Add pepper to taste

Made a few cold salads this evening...
Potato salad:
Potatoes, hard boiled eggs, finely chopped celery and onion, seasoning salt, black pepper, mayonnaise, yellow mustard and paprika and more hard-boiled eggs to garnish with.
Cold tuna/macaroni salad:
Elbow noodles, drained canned tuna, hard boiled eggs, finely chopped celery and onions, mayonnaise, yellow mustard, seasoning salt and black pepper.
Garnished with paprika, and more hard-boiled eggs as well.
I like to refrigerate them overnight so they can marinate. Probably will eat some of each for breakfast in the a.m.
☺️
Update: A very kind commenter mentioned they put sweet pickles and a little dill juice in their potato salad, and I totally forgot to put my dill relish in each salad, so I added it this morning, to both of my salads! Personally not fond of the sweet relish so dill it is for me
