Keto Avocado Breakfast Bowl
Ingredients:
-1/2 Avocado
-1/2 cup of diced cooked bacon
-2 Eggs
-3 Tbsp of butter
-1/4 cup of diced bell peppers
-1/4 cup of diced cherry tomatoes
-1/4 cup of diced mushrooms
-Salt & pepper to taste
Instructions:
1. Preheat oven to 350°F.
2. Slice avocado in half, remove the pit, and scoop out flesh from both halves.
3. Place avocado halves in a baking dish and set aside.
4. Cook bacon in a skillet, remove when done, and set aside.
5. In the same skillet, melt butter and add diced bell peppers, tomatoes, and mushrooms. Cook until veggies are tender, about 5 minutes.
6. Place cooked veggie mix on top of avocado halves.
7. Crack eggs over the veggies andtop with cooked bacon.
8. Place the baking dish in the oven and cook for 15 minutes, or until eggs are cooked through.
9. Top with salt and pepper to taste before serving.
