Keto Avocado Breakfast Bowl
Ingredients:
-1/2 Avocado
-1/2 cup of diced cooked bacon
-2 Eggs
-3 Tbsp of butter
-1/4 cup of diced bell peppers
-1/4 cup of diced cherry tomatoes
-1/4 cup of diced mushrooms
-Salt & pepper to taste
Instructions:
1. Preheat oven to 350°F.
2. Slice avocado in half, remove the pit, and scoop out flesh from both halves.
3. Place avocado halves in a baking dish and set aside.
4. Cook bacon in a skillet, remove when done, and set aside.
5. In the same skillet, melt butter and add diced bell peppers, tomatoes, and mushrooms. Cook until veggies are tender, about 5 minutes.
6. Place cooked veggie mix on top of avocado halves.
7. Crack eggs over the veggies andtop with cooked bacon.
8. Place the baking dish in the oven and cook for 15 minutes, or until eggs are cooked through.
9. Top with salt and pepper to taste before serving.

Say “YES” if you would eat this Keto Coffee Cake
This is the best dessert I’ve ever made and it’s surprisingly easy to make if you can get over the fact that it has a lot of ingredients
Ingredients for the cake mix:
2 cups almond flour
1/4 cup coconut flour
2.5 tsp baking powder
1/2 tsp salt
8 tbsp softened butter
3/4 cup powdered sweetener
1 tbsp brown sweetener (I used truvia)
3 large eggs, room temperature
1 tsp vanilla
For the crumble:
6 tbsp butter
1.5 cups almond flour
1/2 cup sweetener
1 tbsp cinnamon
Instructions:
1. Preheat oven to 350F.
2. For the cake mix, combine both flours, the baking powder & salt.
3. Then in a separate bowl mix together the remaining ingredients & combine.
(I used an electric mixer to combine the butter & sweetener first)
4. Mix together the ingredients for the crumble and break up the butter into tiny pieces.
5. Add parchment paper to an 8x8 dish.
6. Layer in this order:cake mix, crumble, cake mix & top with crumble.
7. Bake for 35 minutes. (You can cover for the last 15).
8. Once a toothpick comes out clean let it cool completely in the baking dish.
9. Top with more sweetener & enjoy!
It has 5g net carbs per slice if you cut it into 8 slices.

Crispy Air Fryer Fish Sticks

Ingredients:

•1 pound of cod fillets
•½ cup of panko breadcrumbs
•1 teaspoon of dried oregano
•½ teaspoon of garlic powder
•½ teaspoon of Kosher salt
•¼ teaspoon of freshly ground pepper
•1 large egg, beaten
•2 tablespoons of olive oil

Instructions:

1. Preheat air fryer to 400°F.
2. Cut the cod fillets into strips.
3. In a medium bowl, combine the panko breadcrumbs, oregano, garlic powder, salt and pepper.
4. In a separate bowl, beat one egg.
5. Dip each piece of cod into the egg and then into the panko mixture, making sure each piece is fully coated.
6. Place the cod strips in the air fryer basket, ensuring that they are spread out in a single layer.
7. Drizzle the olive oil over the top of the strips.
8. Turn on the air fryer and set the timer for 10 minutes.
9. Shake the basket halfway through the cooking time.
10. When the timer goes off, open the basket and check the fish sticks to make sure they are golden brown and crispy.
11. Serve hot with your favorite dipping sauce. Enjoy!

Shrimp and Asparagus Foil Packs with Garlic Lemon Butter Sauce🔥🔥⁣

Shrimp and Asparagus are cooked together in individual foil packs in a rich buttery sauce. The bright lemon pairs perfectly here and the garlic adds so much flavor. Cook them on the grill or in the oven.⁣

1 1/2 lbs large (21/25) shrimp peeled and deveined⁣
2 Tbsp dry white wine or chicken broth⁣
4 tsp minced garlic (4 cloves)⁣
2 tsp lemon zest⁣
Salt and freshly ground black pepper⁣
6 Tbsp butter diced into small cubes⁣
1 1/2 Tbsp fresh lemon juice⁣
2 Tbsp chopped fresh parsley⁣
1 lb medium thickness asparagus woody ends trimmed⁣
Preheat a grill to medium-high heat (about 400 - 425 degrees). Cut 4 sheets of 14 by 12-inch heavy duty aluminum foil then lay each piece separately on countertop.⁣
Divide shrimp among packs near center then place asparagus to one side of the shrimp (going the long direction of the foil). Pour 1/2 Tbsp white wine over each. Sprinkle over garlic (1 tsp per packet) and lemon zest then season with salt and pepper. ⁣
Divide butter pieces evenly among packets layering them over the shrimp and asparagus.⁣
Wrap packets in and crimp edges together then wrap ends up (don't wrap too tight - keep a little extra space inside for heat to circulate). Grill, sealed side upward, until shrimp has cooked through, about 9 - 10 minutes. ⁣
Carefully unwrap then drizzle with lemon juice (or just serve with lemon wedges for spritzing) and sprinkle with parsley.

Say “Yes” if you’d eat this keto strawberry cheesecake

I took some keto strawberry cheesecake to two of my coworkers today!
One dug right in and shared with everyone including me!
The other was fasting and was saving hers for later!
But omg it was so good! I don’t really ever get to eat the ones I make for my people because it’s not like I’m gonna take a piece and give it to them lol but holy moly I outdid myself with this one, I finally perfected my no bake cheesecake recipe! I’ll be sharing it later tonight!
(I topped it with sugar free chocolate for flare 💁🏻‍♀️)

Breakfast Bowl 🍳

This is one of my absolute favorite breakfast bowls! This breakfast bowl usually comes with hash browns but I omit them when ordering. I do prefer their breaded nuggets over the grilled ones, so I don’t change that (the breaded nuggets have approximately 1.3 grams carbs each). This bowl comes with scrambled eggs, breaded nuggets and cheese. I make sure the carbs will fit into my day and enjoy 😊❤️
